I saw some fatbikes that can swap in a 29er boost wheelset. A setup like this might redeem a fatbike as they've always struck me as something it would be more fun to borrow than own.
I have an Ican Sno4 with a 26" x 4.8" tire / wheelset for winter snow. And a spare summer 29" x 3.0" wheelset for summer use. The summer wheelset is really fun to use. Everybody who tries it out in the summer has a grin. Probably not good as one's only bike. But a great spare bike.
The advantage to a full suspension fat bike is that if its your ONLY mountain bike, is that its usable ALL year round, and the jumbo jims are probably the fastest rolling of fat bike tires.
You dont need suspension to ride fat bike in Quebec. You will be better to just stick with the Louis Garneu. Most riders in quebec are riding fully rigid for winter because the trails are so smooth that there isnt any need for suspension. Suspension Is just added weight and cost thats not needed in Quebec winter fat bike locations.
I know the pain of having to source parts for a build. I thought about building a Trifox dual suspension bike a few months ago but decided not to because finding stock was going to be a hassle. Lucky for me I found a basically brand new 2nd hand Scott Spark for less than what a new build would have cost.
You should ride with the Louis Garneau first than change the components in order to compare both bikes. Ex: advantages of carbon frame, benefits of a suspension on a fat bike. Also the title says heavy bike but you said you don't know the typical weight of a fat bike frame, thus your video would be more informative if you had search this information before. Note that the video was a bit repetitive, since you repeated multiple times that there were multiple parts missing and you got only frame et handle bar Good luck in your project
WTF? 2,5kg frame is "very heavy"? But did you realized it's a full suspension fat bike frame? 2,5kg is normal for that reason. Let's say 1,5kg and it sounds it's not gonna last at all.

To ride the official fat bike trails in québec you need 4'' tires! Otherwise it can damage them

you should test some cheaper chinese groupsets, like ltwoo, microshift, or sensah to keep costs down
