    Thanks for showing how to make roti. My grandma passed when i was younger and she made the best roti.
    I have never found one similar to hers until i saw your video. The only difference is she puts the chickpeas in the middle
    I'm 1st generation. My mom is jamaican and my dad is trini but neither know how to make roti.
    I'm looking forward to trying this recipe so i can taste my grandmas cooking again ❤️

    Next time don't put water cover and the chicken products its own juice after that is cook out then add water to make the gray

      Some times depending on the chicken you do need water to help it cook, not every chicken will spring enough water to cook itself. American nasty chicken spring water, Caribbean chicken that is organic grown do not spring water.

    Stir curry powder and turmeric in hot oil then add chicken stir well combine cover let the chicken release the juice.you can add water if you want.

    It's not😮 curry ,it's a soup, u don't add a lots of water in the curry,curry is u fry the chicken with oil,onion,garlic, tumrice powder, curry powder n salt just a little bit of water , so that the juice of the chicken cooks nicely with water n becomes a bit juicy so u can with rice or roti,only people from INDIA IS EXPERIENCING IN MAKING THE BEST CURRY N ROTI

    Jamaican's season the chicken with green seasoning curry Marsala pimento seed then burn a little curry add the chicken allow the chicken to spring it's own juice then later you can add a little water. Like the way you doing your rotie

    The potatoes should be added to the chicken once it's tender all in one pot so both absorbs the curry & seasoning and the water dries out and melds together firmly. I have never seen anyone make a bland roti like this. Something tells me you were not raised in any of the Islands.

      Likely to help balance out the flavors. It’s how I felt when I heard people put sugar in their spaghetti lol. Different people do different things because they have different palates and that’s ok 👌🏾 😊

    Little cumin added to the curry while frying. Some add water to the curry to before the meat, I don't. Way to much water in you chicken, way to early. Allow the chicken to fry up awhile, it makes it's own juices, giving additional flavor. Water later, with additional green seasoning and garlic in final 30mins simmering for gravy. I like very soft potatoes as well, channa separate for me. Roti looks great, don't understand the brown sugar!! Born in Grenada, grew up in T&T early years and make a mean curry. Folks boil curry powder and call it curry. Nice and slow produces flavor. More gravy man!!

      I luv chicken curry ,roti I'm from SA Lenasia , I use oil onion first , ginger n garlic ,sum curry leave n somph seed ,cook oinin half way ,then add masala masala leave to cook fine den add a little water n chicken cook for 10 min n add salt potatoes n water

    I wanna add some insight in hopes it may help somehow.
    I'd def smash those chickpeas with back of spoon half way into cooking.
    Canned is okay, better off just boiling raw chick peas after an overnight soak (takes just 1 hour on low heat to get em boiled, can always just freeze in batches too).
    I'd also use cast iron tawa for the roti skins, esp with a gas burner you are SO lucky to have this, really no point in using 'non stick' cookware for gourmet cuisine.
    😂😂 annnd Please STOP using metal spoons/utensil on non-stick cookware; you are destroying your expensive non-stick cookware and the enamel is slowly transferring into your food

      A pressure pot can help greatly take abot 20 mins less gas roti needed to be clapped to bring out the layers

      @@DarcyMiyamoto well it depends on personal perspectives in the end right, roti paratha chapatti naan pita & all the ethnic variations of flatbread are the equivalent to what bread is for others, and since bread isnt gourmet a sandwhich prolly isnt either, so in that sense youre right Roti is not "gourmet", its just normal staple food in cultural homes but for me as I dont get to eat this type of roti everyday so in MY view, a Caribbean roti IS gourmet. I grew up with freshly made rice, chapati and curry dishes (lentils, vegetables, chicken, goat & fish), to me it wasn't gourmet but for many it is beyond gourmet.

      When i do curry chicken i cut them smaller and also i dont put water in it so quickly. I let it cook a bit first in its own water before i add any water.

    Thanks for the recipe but mixing flour with rings on your hands plus tasting the potato then throwing it back in the pot is not sanitary, just be aware that you are putting out content on video so please be careful....

    Your pan is too small and don’t have much room for the size roti you’re making. You need to fry your meat and curry instead of pouring water over giving it that long water to boil down! When you fry your meat and cover it on low it proudness it own liquid and you achieve a thick rich gravy ! Your meat was a bit white and it was because you didn’t allow it to fry ! I noticed you didn’t use geera or cumin and garam masala these tow ingredients take your curry to the next lev

      Everybody has their own version.Guyanese has their own style.as one mention geera cumin masala.My guyanese friend uses those spices and it taste delicious. I however like the split peas roti with those same ingredients.Her chicken was perfect colour.What the hell you talking about "frying your meat first". That's fry chicken curry.I have seen mulitiple version of curry chicken and roti. Noone has fry their chicken and curry first.

      Not everybody fry them meat. I prefer my curry not fried. Don't even cook my curry with any oil at all and there is still a layer of grease after. The chicken will still sprout it's own water even if u don't fry it

    I make roti also I use up to 5 or 6 layers but off course the pieces are smaller comes out fine I roll it out thinner.

    I love curry and roti, mostly makes buss up shot; tried dosti about twice, but never used a frying pan before gonna use it now.
