  • Best ever Carrot Ginger Soup recipe was made two different ways:
    1. Roasted Carrot Ginger Soup
    2. Carrot Ginger Soup made on the stovetop
    Both methods are easy to make and deliver a silky smooth, creamy and delicious carrot soup that you can serve all year round. Packed with good-for-you ingredients, this soup is actually healthy and nutritious.
    While it can be served just by itself, you can take to a whole new level by topping it with a dollop of Vermont Creamery’s creme fraiche for a luxurious finish.

    Ingredients
    For The Carrots:
    1 ½ lbs carrots peeled or scrubbed and cut into 1-inch chunks
    2 tablespoon vegetable oil
    1 teaspoon Kosher salt
    ½ teaspoon ground black pepper
    For The Soup:
    1 tablespoon of vegetable oil
    1 large yellow onion chopped
    3 cloves of garlic grated
    2 teaspoons fresh ginger grated
    2 cups of vegetable broth or chicken broth
    2 cup of water
    1 tablespoon apple cider vinegar
    1 teaspoon Kosher salt
    1/2 teaspoon Black pepper
    As Garnish:
    Chives
    Dollop of creme fraiche

    I made this and really enjoyed it. I didn’t have any crème fresche so I used a dollop of sour cream and it was still delicious!

    i made this with coriander, fennel seed, turmeric, nutmeg, cumin and topped with plain Greek yogurt. very yummy!

    I made this for my mother and she loved it. I added half a teaspoon of cinnamon and didny have any of that cream she had so i mixed french vannilla yogurt with sour cream and it complimented very well

    This looks very delicious and I am going to make it tomorrow. I think both ginger and garlic should be chopped not grated so you can caramelize them a bit.
    The mixed peppercorns contain red ones from the California Pepper Tree (which is native to Peru and Brazil called Schinus Molle), which grows everywhere in California. Just pick them and dry them in the oven after washing. Yum. It is not a true pepper but adds piquancy. An exotic spice you can add in there - either Sichuan pepper (ground), or Nutmeg - just a dash.
    Another option is ground fresh fennel seed and a pinch of coriander powder.
    The addition of Creme Fraiche is a very good idea. It should add a tart flavor and creaminess. Also the pumpkin seeds.

    fyi-
    Please don't wear jewelry on your hands when cooking. Like any other DIY skill, it can be dangerous. If a bracelet catches on the handle of a hot pan, it can lead to a burn or accident. Please take it off your hands and wrists.
    2. Please do not add music to any demo, DIY, tour, cooking, or animal video. Natural sounds of cooking or DIY are instrumental in learning, and are very soothing. If I turn off sound, I don't hear the instructions. It hurts the ears after 30 secs.

    that was really delicious! I didn't add the apple cider vinegar because I forgot to buy it (I never use that anyway). I added 1 tsp of both cumin and corriander and what a difference those spices made to the soup! Next time I will try to roast the carrots (my oven was being used tonight). This recipe really is a keeper!! I made sure to share it. :)

    You should put the carrots into a bowl to toss, and then pour on the roasting pan

    Looks great! Vegetable oil is super bad for you. But, looking forward to swapping for olive oil and trying the recipe!

    Why add salt and pepper on the carrots when you add it when the liquid is added ? And add GARLIC GARLIC AND MORE GARLIC ! I may add celery ?

    Way too much pepper I think I would’ve added a half a teaspoon to the whole batch not a whole teaspoon made it really hot and spicy other than that it’s a good soup

    Way too much pepper for me made it too hot and spicy I would’ve just used a total of 1/2 teaspoon pepper that’s a lot of work to make it turn into a very spicy hot soup not what I’m looking for in a carrot soup. Other than that the recipe is very good just a warning that’s a lot of pepper

    Ce fel de tigaie ai? Ca eu am cumparat una scumpa din fonta cu invelis de ceramica si s-a lipit GROAZNIC DE TARE. Apoi am luat alta ieftina din aluminiu cu acoperis de ceramica la care nu s-a lipit. Dar tigaia aia a mea de fonta in care s-a lipit pare ca a ta, alba la invelis. Nu mai inteleg...
