I own neither an emersion blender nor a standing one that can handle heat, so what I do - and this might seem weird, but it's kind of my only option - is cook the carrots (or any veggies, depending on what I'm making), let them cool, blend, and then transfer back into the pot and heat it back up. You gotta do what you gotta do, you know?
Definitely! I used to only have a plastic stand blender so I would do the same. The immersion blender really comes in handy for soups now but that’s definitely how I used to make everything too!

Thank you for the recipe and I now have a nice chunk of ginger in my freezer. I could see adding a little garam masala to it as well! Do you think it would freeze? Maybe it would make it watery? Hmmmm! Thank you so much!
I’m so glad you liked it! And yes garam masala could definitely work and add a bit more sweet, spicy flavour. I love that idea! I would add it in after you add the milk and just as you’re finishing up the soup so it doesn’t lose its punch 👍🏼 the texture might change a little bit after freezing but it should still freeze and reheat pretty nicely. I don’t know if I’ve actually frozen this one though so I’m sorry I don’t know for sure. Let me know how it turns out if you try it.
I made this carrot soup yesterday it’s so delicious and easy to prepare, I also added a pinch of turmeric to the sautéed onions and crushed toasted almonds for the garnish, so yummy! Thank you Kathryn for this recipe.🎉🎉

No it was a bit of an up all night working and power through situation lol but it’s all good. I’ve slept since 🤣 and no it’s the same project I worked on behind the scenes last year so not a featured role but lots of on set time which has been nice 😊
