    Just made this - delicious! The lemon (I used a very juicy mexican lime) made all the difference. I knew when I saw your quantities - so much ginger, lots of garlic - that I would love it.

    Wonderful soup. Thank you. I had mine with Greek yogurt and parsley instead of coconut and thyme. The recipe is for keeping. 😀

    I've often made a carrot and ginger soup, but came to see how you used coconut milk as I generally have a tin in the pantry, will give it a go next time. What's in your vegetable stock? I don't think that my beef stock is ever so dark?

      It’s a package of vegetable stock… brand is called kitchen basics… they have good stuff

    I like this pan. Is it easy to clean? I'm trying to move away from teflon.

      Yes it’s easy to clean… only downside is they are a little heavier

      Almond milk, oat milk, evaporated milk, sour cream, Greek yogurt, heavy cream

    When do you add the coconut milk and how much

      I use one can per recipe… add a little at a time as you blend the soup depending how strong of a coconut flavor you want

    It does say how much coconut milk or lemon juice. Terrible! What a waste of time.

      He said clearly "a touch of lemon" it was probably half a lemon, coconut milk he only used at the end for garnish, we don't need measurements for that, ❤️
