I appreciate your input on making meatloaf. Especially the I egg to a pound of meat. We add Worcestershire sauce and parsley and carrots to our, and NO ketchup or tomato sauce. We like brown gravy added inside and on top of ours. Funny how there’s so many variations. Thanks.
I love the simplicity of your meatloaf recipe. I know it is delicious! Years ago, I came up with a special recipe that gets raves every time I prepare mine. I call it "Million Dollar Meatloaf". I usually make a 3 pound variation with Fillet Mignon (1 lb.), Rib-eye (1 lb.) (ground by my butcher), Ground Sirloin (1/2 lb.) and 80/20 hamburger (1/2 lb.). I like to mince my onion, and I add 1/2 half a green and red bell pepper minced, plus 1 stalk of celery minced. I am not a hige fan of parsley, so I do not use it. I love your addition of minced garlic, which I will now incorporate into my recipe. I use the same ratio of eggs/pound of meat, generous amount of salt and pepper and I will either use Saltines or Ritz crackers finely ground for the binder. I also use the tomato sauce and I also add some ketchup (about 1/4 quarter cup), and 1 tablespoon of Dijon mustard, then I add a table spoon of Worcestershire Sauce, Heinz 57, A1 Steak Sauce and a local steak sauce (Boar & Castle sauce). This was developed by a local restaurant in Greensboro, NC many years ago. The sauce can be ordered on-line and is carried at most local grocery stores in Greensboro, but the restaurant has long since closed. I love the meatloaf 1lb. baking trays with the removable insert. It has holes in the bottom so the meatloaf can be removed easily, leaving the grease in the bottom of the baking tray. I love your meatloaf topping and I only use a light coating. I cook mine at the same temperature and the same amount of time, as I also love the good and done top! I like the sides you suggested, and I usually have this meatloaf with my eggless potato salad (believe it or not, it is wonderful and I do not like boiled eggs), Southern Cole Slaw or Cucumber salad w/onions, pinto beans & white corn, sliced tomatoes, and since me and my Dad love cranberry sauce, I have that also. Got to have yeast rolls, Southern Sweetened Iced Tea, and for desert, either apple pie or blackberry pie. However, you can believe I am going to be making your Aunt Faye's strawberry cake - YUMMMMMY. Since everything is BIGGER in TEXAS, (and sometimes in North Carolina - LOL), I thought I would share my recipe in the event you wanted to possibly try this - Don't Be Scared! I had to get two plus pounds of burger cooked up and I was tired from work and didn't feel like making the meatloaf when I come home. A girlfriend at work told me about a recipe she just heard about. She said use a half a jar of mild salsa in place of chopping peppers and onions. I made that meatloaf using that salsa and everything else I normally put in meatloaf. It was so good, I have never looked back. It's just another take on meatloaf. I know yous is delicious too!
Love meatloaf!! I use either italian bread crumbs or a box of savory herb Stove Top stuffing in mine. Along with onions, orange bell pepper, and A1, worchestire, bbq sauce. I top it with ketchup and bbq sauce. Growing up my mom would put torn slices of bread in hers....it was ok at the time cause we were really young. Middle school and High school when I was doing all the cooking, things changed 😂😂...yours looks delicious!! I love ya girl! ❤ God bless!!
When we were growing up mom made hers just like this but added green bell pepper. We ate it as kids with a pile of ketchup. My dad would say are you going to have any meat loaf with your ketchup tonight?😂. Now I love bbq meatloaf too.

Hi Talli! Haven't made meatloaf for a few years because I got kind of burnt out on it but I wanted to see what you put in yours. I've tried quite a few recipes over the years and as you said there's so many things you can put into meatloaf without ruining it. But what you put in yours I basically put in mine except I add usually a little bit of chopped celery as I love celery. I also don't put tomato sauce in it. I guess the reason for that is because I'm afraid that maybe it won't hold together well but I do use seasoned bread crumbs also. The tomato sauce I've actually used on top of the meatloaf before it goes into the oven combined with brown sugar and a little bit of yellow mustard. But anyway yours look totally scrumptious and I may just try it with using the tomato sauce the next time I make it. 🤔❤️
My family live meat loaf but sometimes my meat loaft don't turn out my meat loaf don't stay together goof but I am going o try your's and see what I can do I love you videos
I make my meatloaf just like you do. Every once in a while I will add some diced bell pepper. Depending on what I am making to go with the meatloaf I will add some diced jalapeno.
i was always the one in the family who hated the onions in my mom’s meatloaf. Everyone else loved them so she would make me a mini meatloaf (but she would just chop the onions much more fine than she used in the main meatloaf) She didn’t tell me that she actually put onions in it until I was in my twenties haha
