    chef hiroyuki luks very cute when he tastes his dish after making it. He takes a while and shakes his head up and down nd then gives a small smile appreciating his dish, very adorable.

    Hiro I learned a lot from you!!!! I’m filipina from The Philippines.. and I am working here in Romania... my employer appreciates so much how I made sushi.. they don’t know from where I got the ideas...all from you..next year I will start to work on the sushi house!!!     it's so satisfying when you cut a salmon and tuna chef hiro. Your a good chef I think your creations are nice and delicious.Your the greatest sushi chef I've ever seen

    Whenever I go to a new sushi restaurant I always order it... I judge how good of a sushi master you have by how well they can make one.. lol...

    This looks great. At the restaurant I work at we use yellowtail tuna, salmon, whitefish (escolar), and avocado instead. We don't carry tobiko though. I would like to use it, as it is a nice final touch.

      Farm raised is often just as good as wild if you get it at the right place. Plus its sustainable. Which is something we desperately need in this day and age. Respect it.
