- Recheado masala, also known as Goan raechad masala, is a fiery and tangy paste that is used to marinate fish and meat. It has a variety of spices and a rich red color. Made with chilies, spices, and vinegar.
Ingredients
20 Dried Kashmiri Chilies
1/2 tsp Cumin seeds
12 nos cloves
1/2 tsp Turmeric powder
01 inch Cinnamon stick
08 nos Black Peppercorns
12 garlic cloves
01 cup goan toddy Vinegar
04 Onion (diced)
02 tbsp Oil
01 tsp Salt
02 tbsp sugar
Method
1) Soak the dried Kashmiri chilies in vinegar for half an hour and drain it. Cut it into half.
2) Heat oil in a pan and add onion. Saute till it turns golden brown in color. Remove in a bowl and allow it to cool.
3)Add all the ingredients in the mixture jar and grind it into fine paste using vinegar. You can add more vinegar depending upon the consistency of the masala.

Instead of Goa vinegar, Kalvert's red vinegar also works
Never tried it. You can make a small batch of masala and check for the taste
What if I don't have Goan vinegar? Can you recommend any alternative?
