I do this myself but in a much smaller batch. One pound of bacon to 18 eggs. Makes 10 breakfast tacos though not as full as yours. I only eat them when I'm in a hurry or I'm tired of my usual breakfast of steel cut oats and coffee. I make my own salsa fresca to go with the tacos, it tastes closer to taqueria style than the jar stuff. I usually make my own tortillas as well but sometimes I cheat and use store bought.

You could use parchment paper (not wax paper) or paper towels. Then put them in reuseable Tupperware or bags in the freezer. If it doesn't want to fold around the burritos you can use kitchen twine. Also possibly you could use corn husks after you soak them in water for an hour or two. I try to use as little aluminum foil as possible as it seems like such a waste.

Save that big bag that the tortillas come in and just place all of the rolled burritos into that bag and seal it up, place it into the freezer, and pull out the burrito one at a time when you're ready. You can even double bag it if you use 2 bags of tortillas while freezer prepping. It eliminates any extra waste since aluminum foil is potentially even more harmful to the environment than plastic, and you probably throw away the tortilla bag anyway. You can also place them into the toaster over to get a crispier tortilla before placing them into the freezer. Put the burrito into a glass storage container for him to take to work and he can microwave it in the glass! I've learned a lot as I go too!!

    • @purplehaze412
      @purplehaze412 5 ปีที่แล้ว +24

@@humbertoheredia6734 Humberto Heredia This is not a good take. If one can re-use the plastic bag that the tortillas came in then IMO it's imperative that they do so - less to throw away so less trash-takeout and less contributed to the recycling of a household (or, if the person is using this for work, then of course either of the former at work).
None of the above is useless, and takes IMO very little thought (as Angela just improved upon). Yeah - corporations are shit and do outmatch most of us but you should still use your head.

Love the idea about adding spinach. I love making fried chopped potatoes with scrambled eggs. Then you add something different to each. Since most chorizo at grocery stores are not the best, I mix ground beef with the chorizo. Some stores sell Santiago pork chili. Some potato and egg burritos I add the chorizo mix or Santiago pork chili, then cheese. So good. You can buy 4 street tacos, use what's inside including the onion, and cilantro, mix on a pan with fried potatoes. Make as many burritos as you can and use the tortilla from the tacos to eat some potato steak tacos for yourself.

I've been having trouble eating food at home and I tend to get take-out and fast food far too often. You inspired me to make my own frozen food collection. Hopefully some of you will be inspired by what I made, or at least gawk at it.
Thank you so much for inspiring me to cook again, Jordan.
    Breakfast burritos 60 of each
    1. Ham plus - Ham, bacon, onion, jalapeno, 65% Sharp Cheddar 35% Jack cheese blend, green onions, egg & small amount of diced potato.
    2. Sausage bekfast - Chorizo, onion, jalapeno, ^ same cheese blend, onion, poblano peppers (basically green bell), egg & diced taters
Hot pockets - 30 of each
    1. atomic meat lovers - pepperoni, Italian sausage (hot), bacon, ham, scotch bonnet, 70% mozz, 30% ricotta, custom red sauce
    2. atomic veggie lovers - Broccoli, tomato, onion, green pepper, mushrooms, scotch bonnet, garlic ^same cheeses, custom al fredo sauce (herbs - fennel, caraway, basil, parsley)
    3. the works - ^ combine all ingredients, takeaway fennel & caraway, sausage supplies that already) paint bottom with red sauce, layer filling, cover with white sauce, extra garlic, 3 very very thin slices of butter to top white sauce across the pocket)
    4. the parm pocket -fried chicken cutlet, 85% mozz, 15% ricotta, extra garlic&onion powder, zucchini noodles. I roll out dough thin enough to triple layer, garlic&butter between layers (and now your pocket is the garlic bread to go with your parm).
I've been microwaving these straight from frozen and it seems to work quite well, just varies from 4-6 mins.

Eco-friendly solution for freezing anything that you want to store together but you'd rather prefer them not to stick together: use a small oven tray (that feets in your freezer) covered with oven paper (or the reusable version) to avoid them sticking to the tray, and lay the all individual pieces in the tray without touching each other. Once it is frozen (it does not take too long) you can store them all tight together in the same taperware or freezer bag (again, there are reusable too) and the tray is free for the next thing you'd like to freeze. If one tray is not enough you can put another one on top (but with another layer of oven paper in between the two). If you don't have an oven tray that fits in your freezer, anything that is flat and does not bend will do, e.g. a cutting board, or you could also try with taperware although that option might take more space in the freezer (as they need to be not touching each other while getting frozen and tapers are usually smaller and higher; but on the other hand you can put the lid on and store one on top of the other safely). To carry them to work you can use any of the many eco-friendly options in the market, some of which have already been mentioned in the coments.

Great video. I love to make breakfast burritos. I brown sausage, onions, peppers, cheese and eggs in frying pan. I lay a piece of provolone cheese on the burrito and spoon the ingrediants onto the burrito. After wrapping, I wrap the burrito in commercial pop up wax paper and place them in plastic tupperware-like container. Holds 8 burritos. I nuke the burrito and paper together and unwrap to eat. I do this, but I use ground turkey with taco seasoning and I add a generous, heaping scoop of cottage cheese just before it's done cooking. The cottage eventually melts and incorporates into the ground turkey making is sort of smooth and creamy. This will 100% solve any dryness/moisture issue. Also, for my eggs I do a very soft or wet scramble. If your eggs are dry, they've cooked too long. Finally, I wrap my burritos in parchment paper. It feels a little more eco-friendly, plus you can put them straight into the microwave without unwrapping them.

Looks good Jordon. I used to travel and needed fast food I could eat in the car. I used to make them all the time except to keep the filling outta my lap I’d cook the eggs in a small pan and sprinkle my toppings on like you would a thin omelette so nothing would fall out. I wish there was a eco friendly option other than foil for long term freezing. I only made a weeks worth at a time so I would put mine in a ziplock freezer bag. I used to sell food and packaging. You could try those grease proof papers like the paper subway wraps your sub in. You would have to put them in a freezer bag. Those papers are called Handy Wacks & can be bought at a Gordon’s Food Service store. They come in different sizes and you can microwave right in them. No need for paper plates. Hope that helps.
