      I once colked a normal melon to make sirup for some drinks, it turned out horribly like amixture of cucumber and pumpkin...

      @@ChefRudakova I don't totally remember, but i think i just cooked and mashed them in sugarwater and rinsed it afterwards. Yes, I know it sounds ridiculous, I had no idea how to make sirup bcs. I've never done it before and just wanted the sirup so I could make some melon soda😂
      Btw if anyone knows how to make melon sirup that you can use (for melon soda) I would gladly apreciate the recipe, I couldn't find any online, just for watermelon.
      PS: The melon tasted totally normal, just the "sirup" was weird...

      I used to grill watermelon slices slightly covered with brown sugar and serve it in a seasoned rocket bed, with parmigiano mousse dots and roasted pinuts. I know is not even close to what you do, which is amazing.
      There is actually a sauce that I had on the menu, for only a week , when I worked at the beach, in Ravenna. Unfortunately my Chef did it by himself and never told me the recipe.

      I was wondering how You would make that sauce , without a recipe..

    You had me at Canadian Whiskey (i.e Rye Whiskey). Fancy molasses is lighter and sweeter than blackstrap. I'm going to give this a try but will also do the same with a mango and a peeled orange (rather than sliced). Thanks Natalia!

    Hi chef rudakova. I tried your Apple risotto amuse bouche. I came out very close to it but not exactly how you made it cuz some of the sheet got stuck to my cannoli but I was quite happy with whatever I managed to pull out it tasted as heaven. I’m gonna try this one also. Thank you again

      if you mean the cure mixture, yes, absolutely. The inspo fo the salmon cure actually came from the salmon cure. 🙃

    Molasses is black coloured sweetner made by refining sugarcane!! I use it often.

      @@ChefRudakova because it's pure and made with 100% sugar cane with no additives. And less sweet than white sugar. Many people prefer to have it. It's just awesome.

    amazing, thank you! tbh when I saw the nuts, my brain went ow no here come the vegan nuts, unnecessary complication hahah. I think without would have been fine too but maybe you were scared it would be too simple. but you put so much work into the watermelon, that's all I want to taste, maybe with a fresh herb and some fat like you added. I love the way you work, giving us your thought pattern but never being long winded

    have you tried cureing watermelon vacumed?

      I don’t have a vacuum machine... but in this case it’s not going to make any difference. Vacuum is great for storing, marinating and sous vide. For curing in salt, plastic is just as good🤓 Good question!

    I tried IT. The Lemon was great. The Melon was very salty, i think, the next i Mixed Salt and sugar.

      @@ChefRudakova fancy molasses means that it is the sweetest out of all different types of molasses. Its because it has been condensed from the pure juice of sugar cane.
