I mix wheat flour with water until it becomes a paste the consistency of yogurt. Any thinner and the coating won't stick. You could replace the water with aquafaba.
What if you were to dehydrate then rehydrate the melon but rehydrate it with the marinade then marinate it in coconut oil freeze then sear. You could always use corn starch to get a great crust too.
What if you freeze the watermelon after it has soaked up the marinate, then bake it at 200F-300F for 3 hours, which is what I did with firm tofu, and it came out just like chewy steak, also the texture was almost like jerky, but I liked it!!! :) Thank you for Another Awesome Recipe!!!
You should collab with some other health and food channels , try and get some neat ingredients from them and see what nifty tricks you can do with them

just an fyi, seedless watermelons are considered seedless bc they dont have black seeds in them, they still have the (edible) white seeds :)

In original worcestershire sauce is some fish sauce, so I guess he wanted to keep it vegetarian at least.

Good but different. Has a slightly meaty taste but you can tell its not meat, the texture reminds me more of the smoothness and bite of sushi salmon.

chick pea flour or 3 tablespoons of juice ( called aquafava) from a can of chick peas replaces one egg. beat juice until fluffy

Yeah that would work perfect!! You can actually just dip flour into any sort of thicker liquid. I almost wonder if a flour and soy milk would work??
