The Best Hot Dog Chili You Will Ever Taste...I Perfected The Roanoke VA Weiner Stand Chili

  • This recipe is the closest to Roanoke, VA's Weiner Stand Chili that I can get. I have worked and worked on this chili and finally got it down for my daughter, Kayla's 21st Birthday Party. It was awesome and everyone loved it. It takes a lot of ingredients but it is well worth it and very easy to can with your pressure canner. They say it is close to a Coney Island Chili but to me it is just like "The Weiner Stand" chili in Roanoke, Virginia. Next time you are having a party or want to make your own hot dog chili give this a try. :)

Ms. Debbie, I don't mind you being slow as some of these rude people say. It gives me time to write. I know it was good. I heard you say that it had to cook all day, so I know that it thickens as it cooks for those who keep saying it is watery. People can be so ignorant and rude. I think that you did a 'WONDERFUL" job. Thank you!!!!!!

I recently made hot dog chili and I think I made about the same as you. I went online to YT and found many recipe's and mixed and matched and did some omitting here and there, etc. I've eaten it twice this week and froze 6 individual baggies for future use. In all honesty, I thought mine was just a tad too sweet. Next time I will omit small can of tomato sauce and omit the brown sugar. I will rely on a couple of TBSN of ketchup and 2 TBSN chili powder to provide a little coloring. In the end, select a hotdog with a casing. I had to visit 3 grocery stores to find them. The label will clearly state "natural casing". Sabrett's have casings and they have national distribution. . The casings will offer that snap that literally all hot dog stands offer. Buns must be extra fresh. Onions must be chopped pretty small (at least ensure onions aren't chopped large). If serving grated cheddar, it needs to be grated pretty fine. I bought a 60 cent can of sauerkraut and it was a good change of pace to have kraut and mustard on one of my dogs. I may try mixing meats on my next batch. half beef half pork.

I just ran across your comment, Gail Thomas. Thank you. I do not see these rude comments and I am glad. We are seeking a happy place are we not? Food. Friends. Family memories. And, for those who are rude... Ms. Debbie is Southern, not slow. We move like molasses down here. Slow... sweet... worth the wait.

I just read the reviews and I am amazed how rude people can be. They demean only themselves with their rude comments. The first thing should have been congratulations on your daughter's 21st birthday. The second thing should have been appreciation for the recipe because I am 68 and haven't ever been able to find anything close to the smell and taste of the chilli. Every trip home to Roanoke from Utah had a first stop to the Roanoke Weiner Stand. I personally knew the great-great grandparents and family. On the last visit the current generation didn't seem to appreciate what sacrifices their past generations made to give them the life they have. They even moved the location. I have not been to the new location downtown. You keep your head up and know that your efforts are greatly appreciated by those with good manners.

Thank you so much for taking the time to walk me through this recipe. I haven't made it yet, I was able to right down exact ingredients and steps with out rewinding. I also added to favorites and will watch again with my wife. I just know this is going to resemble my favorite sauce from a hot dog restaurant that I frequented for over 40 years. Keep cooking girl!

Thanks, Debbie. It sounds great and I can't wait to try it. To get your ground meat in smaller pieces, I recommend that you put it in the cold water and cold beef broth and stir it into a kind of slurry before you even turn on the heat. Once the heat is on it clumps together. I'll have to cut the recipe down some, since it's just my wife and me, although I suppose I could turn it into "eatin'" chili after I've made weenies.

Mary Montalvo It’s a basic ole fashioned diner chili “sauce” recipe. Covering the raw meat with water and reducing by half keeps the meat wet and soft. It is never browned first. Use very lean ground meat if you don’t want a lot of grease. There are many similar recipes on TH-cam.

All spices were "heaping" meaning the measurement was a bit more than stated.
5 pounds of ground beef (half ground chuck and half hamburger)
1 can of Swanson Beef Broth
1 Bottle of drinking water (12 oz ? 16 oz?)
    1 tablespoon Worchester Sauce
    2 tablespoons French's Yellow Mustard
    1/2 tablespoon tomato paste
    1 tablespoon onion powder
    1/2 to 1 tablespoon cumin
2 to 3 tablespoons chili powder
    1/2 tablespoon smoked paprika
    1/2 tablespoon powdered garlic
    1/8 teaspoon cinnamon
    1/2 tablespoon ground mustard
    1/2 tablespoon salt
    1/2 tablespoon ground black pepper
1 teaspoon splenda brown sugar blend (can use regular brown sugar)
    1/4 teaspoon cayenne pepper ground
    1 whole onion grated fine
    2 tablespoon ketchup
Put all the ingredients into a large stock pot. Mix together. Put heat on med high and stir and mix constantly. When it comes to a boil, turn the heat down to low, and simmer, until the mixture is as thick as you wish - it may take an hour or several hours. Stir every few minutes to ensure it does not burn.

    Great video..
You should consider a boom mic or similar if your going to do videos regularly..
The sound is okay, just a little "distant" with a bit of echo,,
    Just a suggestion!
Hope your planning and party went amazing

Looks like your b-day party was successful. You should consider writing/posting this recipe. I watched like 75% of video but I was in a rush. Many of us dont have 18 min to give.

This is the recipe I have been looking for. Sometimes I can't afford ground chuck because it's so expensive. Can I use all ground beef? Thanx for your response
    Btw, great job 👍👍👍👍👍👌 👌👌👌👍👍☺️☺️

Yes I'm sure they use regular ground beef I just didn't want the extra grease but if it's ok with you I'm sure it will be just fine. Good luck!! Have a great week!!

Your daughter is beautiful and I hope she had a wonderful time. That chili looks delicious but you're going to think that I am crazy...because, I don't like the Roanoke Wiener stand chili and I don't like the chili from the Texas Tavern either. I'm a really picky old bastard when it comes to chili. ;-)

Wayne Hodge Wayne, Wayne, Wayne....I have worried about you and worried about you. I haven't seen you around in a while and just needed to see you were still around. Wow!!! I am so happy now. There are a lot of people that don't like the Weiner Stand Chili (my oldest daughter being one of them) but thank goodness there are more that like it than don't like it. LOL Thanks for being here and thanks for being OK. :)

***** Well it is nice to know that I am missed by someone. =) Yeah, I hit a rough patch for a while, but things are slowly but surely getting back to normal.
Well I glad to know that I am not the only one that doesn't like the Weiner Stand chili. When I told my younger brother decades ago that I didn't like Texas Tavern chili he told me that I was out of my effing mind. lol
I have a very simple recipe for hot dog chili: hamburger, tomato sauce, garlic, onion, chili powder, and a little Cajun seasoning. Every year at the family cookout I get to bring the chili, it is good, even if I do say so myself, even if it is just a simple recipe.
Don't worry, when I leave this world both my sisters have been told that one of them is to log onto my computer and send a notice to everyone in my address book that I am gone.
      Take Care Sweetie,
      Wayne

Why does it look so watery? It would soak the bunn and be a mess ? Did it thicken up like chill sauce ?
