Recipe:
Serves 5-6 people
Here's the ingredients:
7 lbs of Tripe
Handful of Chives
1 tbsp of vegetable oil
1 ginger root sliced
1tsp of minced garlic
1 tbsp of salt
1 tsp of white pepper
1/2 tsp of chili powder
6 oz of chicken stock
1 tbsp of light soy sauce
1 tbsp of sesame oil
1 tbsp of chicken seasoning
Thicken the Gravy:
1 1/2 tbsp of cornstarch
3 tbsp of cold water
How to:
1) Wash the Tripe with 1 tbsp of salt, rub salt over the tripe and rinse and squeeze out any excess water and set it aside
2) Cut Tripe in half if too big
3) Boil 6-7 cups of water and blanch the tripe for 2 mins on each side (total 4 mins) Remove from pot and shock the tripe under cold water until it's cool to touch, then squeeze out the excess water and set it on a colander
4) Wash ginger root and cut them into slices set it aside
5) Wash chives and cut them into 1 1/2 inch in size and set it aside
6) In a Wok, on high heat add in 1 tbsp of vegetable oil, ginger and minced garlic and stir fry for 1 min
7) Then add in your tripe and Chives and stir fry for 1 minute
8) Add in your chicken stock, salt, chili powder, soy sauce, sesame oil and chicken seasoning and combine all the ingredients well.
9) Then turn the heat to medium and place a lid and let it simmer for 10 mins.
10) After simmering for 10 mins, prepare the cornstarch mixture, this will thicken up the gravy.
11) Serve this dish hot, enjoy!
