    You sound so much like my own mother. Her focus was feeding her 13 children. We preserved everything. Our table always look like a banquet for a king. There I was on the bench beside my daddy.He sat on one end of table and my mommy on the other side next to daddy. On the memories are flowing. T u for sharing your precious family with us!!

    This challenge has really shifted how I think about how to preserve smaller batches and just doing what I can consistently rather than feeling pressure to do huge projects or nothing at all. Still love my big batch days but I’ve gotten so much done even on days I work or can’t be at home all day. Thank you!

    My grandmother taught me to take my green tomatoes and wrap them in newspaper and put them in a paper bag. She said put the bag in a cool space like a basement or someplace in your house it’s cool and then in the winter time when you want a fresh tomato you will have one. They will write them in the paper bag with the newspaper on them. My friends and girls thought that was really cool because they were so surprised that we could have fresh tomatoes in the middle of winter. I love watching your channel it’s very

      I have done this with ripe tomatoes as well, to slow them from spoiling. Newspaper nice and tight, dark basement. Works great.

    Swinging the chard like a bat, boys can turn anything into a sport 😋 and the girls practicing their back flips takes me back to my childhood with my sister. You have a lovely family.
    I have some peach pits in the fridge. They aren’t enough to bother with jelly but I figured I could find a use for them so I think I will start some peach pit vinegar. Thanks for the idea!

    Always enjoy your videos. Your #everybitcounts collaboration was wonderful. It introduced me to so many great TH-camrs and taught me some terrific things about saving, storing and generally just not wasting food. I have been on a mission lately to better manage my food and the collab was a great boost. I even bought a food dehydrator! I don't love spending time in the kitchen but - in the last month I have dried bread for breadcrumbs, made pie filling from apples and cherries that needed to be used, cooked down some extra tomatoes for sauce, used my freezer to save leftover lemons, grapes and milk, dried orange and lemons peels and the skin of apples and peaches for tea, saved seeds from flowers and vegetable plants and dried herbs. My next experiments will be making refrigerator pickles, dehydrating some hot peppers that I got from a buy nothing group and making pesto., dehydrating some tomatoes from the farmers market and using the dehydrator to make zucchini chips. I'm on a roll. Thanks for the inspiration.

    The freezers weren't as messy as I was expecting. I have so much trouble keeping our one big deep freeze as organised as possible. Milk crates are my best friend in there. What a beautiful accomplishment having so much home raised, well loved protein in your freezers . Thank you for sharing lovely 💚

      We tried raising a beef cow. I was at work when the guy came to slaughter. I could never eat a bite of it and ,about 30 years later I still feel guilty. Safeway for me

    Your ham looks delicious!! I always get fresh hams too and will have to try your recipe.
    I have been putting my hams on the grill and smoking it for a couple hours. It has come out juicy and great on sandwiches, but with winter coming I will have to move cooking into the house soon. Thanks for sharing!!

    We are having a cow processed in 2 months. It's raised by someone we know as we live in town. But my freezers look just like yours so I have been busy busy canning and not putting any of our garden in the freezer so we can make room. It's time fir a freezer challenge here!!!

    Great video. Just something to consider that may make loading easier in the future, is to allow the animal access to the alleyway. Also, feed her in the trailer for a few days before you need to get her loaded. This can help desensitize them and can make the whole process easier.

    I just cleaned out my freezers yesterday. I need to put zucchini in everything this winter. The main goal was to see if I needed to do pumpkin this year. I did two big pumpkins in 2020 and I still have plenty. Lots of rhubarb to use up this winter as well. Feels good to get it organized. I’m trying to spend as little as I can at the grocery store and work on using the food I have.

We had family visit and lots of pork meat I need to preserve, so I will be canning those today (with God's help). That fruit blend looks great so does the lemon-aid.     I'm a new subscriber. Last year other people I watch were doing your challenge. So in June when my garden started. Small garden I started preserving. I found you in aug. But it was you that inspired me to do smaller more frequent canning. I've got a year of beans, corn, relish, pickles. Tons in freezer. Now it's wood season. Thank you for inspiring me to do Small projects that add up. It's easier than trying to do huge sessions that wear me out.

    We just did this. It took about 8 hours. Definitely learned a lot of lessons. Thankfully our butcher is super flexible otherwise we would have been in a heap of trouble.

    I have the same problem. We are getting a heifer in 2 weeks. I've been trying to clean and rearrange the big freezer. I canned the last 15# of ground as taco meat. I had 6 last ears of corn so I added that too. But I still have to make more room.!

    The porkbones can be used for in a pea soup. Her in the Netherlands we called it "snert". Its a delicious winter soup that warms your body when its cold outside! 😄 But your puppies love them also!! 😂😋

    I try to use something up or preserve something each day. At the moment, I have yellow summer squash in the dehydrator. In the last week, I've used up leftovers by recycling them into different meals, dehydrated citrus peels to use in simmer pots this winter, and dehydrated fresh ginger root. I also found a really good sale on ground beef and busted it down into small 3/4 to 1 pound packages (depending on what I am going to use it for). Next up is to dehydrate some cabbage and then some potatoes. I also have a bunch of green onions to use up and two tomatoes to use before they go bad. We are a family of 7 with a pack of dogs and some cats, so nothing here goes to waste either. We recycyle old clothes into cleaning rags and we plan to start making rugs from them as well. We use everything until there is no other uses left for them and then they finally get thrown away.

    Your freezer was not messy. You have A Lot of clearing out to get ready for your cow. We pick up ours tomorrow.

    This was one of my favorite little bit counts videos, I often have little bits and pieces in my freezer and this was so encouraging!
    As far as liver, especially while pregnant, you can buy a gelatin capsules filler and make your own liver capsules!! Very good for you, shelf stable (though keeping in the fridge keeps the smell away!!) And so easy to take a few with each meal!!

    Pork broth works well when making baked beans. I use it instead of water when I have it! It adds to the bacon-y flavor.

    Very interesting and diverse video today. You covered so much, garden tour, a very patient cow loading. Freezer clean out and live stock dogs. My mum would make lambs fry and bacon. This is made with lambs liver, skinned, fried in butter with bacon. A gravy made from pan juices. Served with mashed potatoes and green beans.

    Wild caught you could always can your salmon and it’ll take away some of the bulk in your freezer and it will be shelf stable I add a little bit of liquid smoke to mine just for the flavor works wonderful

    I used to have a commercial reach-in freezer but I left it with a house I sold years ago. Nowadays, I would love to have a walk in freezer with its own dedicated solar panels and batteries. I do have a 15cf stand up freezer which I keep on a timer. Like a timer for lights, it turns off for up to 6 total hours daily and I never have a problem with them being off 3 hours twice daily despite summer temps in the 110+. Saves on the electric bill. In the summer I keep my crockpot on my back patio. It's hard to cool off the house here in the summer with 3-4 months of 100+ temps. I don't have a freeze dryer so I canned liver. I am the only one in the house who eats liver so 1/2 pint jars of chicken livers is good for me.

    We’re currently roasting bones for broth and I just finished up a big batch of tallow this past week and I’ll be canning up a bunch of meat soon. I’m in a similar situation, we will have more beef coming and we really barely started on the last one ( and my hog freezer is already packed full ) but the butcher has limited openings right now and we had to take what opening we could get. I’m grateful to him and I remind myself that this is a blessing.

      I’m also making watermelon rind jam, relish and candied pieces that look like gummy worms. We’re having several watermelons tomorrow.
