Hey it's your fan marlyse 😊 so my sister has put my autistic neice on keto without telling her (she's over 300 lbs and wouldn't do it willingly) . Anyway I turned her on to your channel and she told me she just made these and Erin didn't even notice that they were "different ". In 2 weeks, she's lost 6 lbs. You are helping so many people 😍

I have been trying different recipes for foods I have missed while eating Keto. Cookies are one of life’s pleasures! I made this recipe today and it is a very good, well thought out recipe that I will make over and over again. I’d say chocolate chip cookies are an American staple! This cookie (like all Keto recipes I have tried thus far) is best when allowed to cool completely. I am making your recipe for bread next. My bet is that you are going to have a channel that thrives. Your work is good here and a solid contribution to people who would like to get their weight in line, but not completely forfeit the cultural pleasure of treats.

I love the fact that you don’t use almond flour as much. I have Oxalate Toxicity because when I was eating bad pastry breads full of it. Then when I was eating good, lots of spinach lots of leafy greens full of Oxalates, by 2018 I was crippled with pain in my joints after I tried to go on a very strict diet, oxalates in my body were not having and they started flooding, causing joint pain.. so I am very careful not to have very many oxalates in my diet. And I really appreciate you looking out for us.!

I used to get the Pillsbury frozen sugar cookie rolls. I would cut off a few cookies and bake them. That way I didn’t over indulge. It looks like your cookie dough could be rolled up and frozen. I’m going to have to try that with your recipe.

The whey protein is what I found is the best way to make keto baked goods taste just like regular desserts, it is my flour mix I use for everything now. You can use almond flour but I don't know how much you would need exactly and it probably won't be as light of a dessert.

I can't and my mom can't (she usually can easier than me). Whipping the sweetener with the butter for a long time cuts down on the cooling effect cause it dissolves the sweetener into the baked good better than just mixing ingredients together.

I’m allergic to gelatin, do you think I could use just xanthan gum or agar agar as a substitute?

    • @KetoUpgrade

I'd say agar agar, just look up the equivalent to gelatin to see the amount for the same effect.

Ok. Just looked it up, it's a substitute for almond flour which means you will probably need 3x as much to replace the coconut flour in my recipe.

Hello! I was wondering if you have ever used lupin flour? I use Aviate Lupin flour and it doesn't have that bitter taste. Lupin flour is very low in carbs and high in fiber, but if you are allergic to peanuts, legumes etc., you must stay away from them.

My family member is allergic to peanuts so I used it once before I realized it was a legume.

awww... shucks. Was SO excited the way You say gluten & nut free!! "everyone can eat these". Except for us dairy intolerant folks :-( Anxiously awaiting some dairy free things also. Or a good work around for whey protein isolate. Thank You for using Your powers for good :-)

    • @KetoUpgrade

I'm sorry I'm not dairy free, but I'll be testing the vegan protein soon. But there are so many different allergies I can't test them all especially when working another full time job, it's already hard to figure out a new recipe every week (plus planning a wedding for 3 months from now). If you are just lactose intolerant there is no lactose in whey protein isolate. If I can do just this full time, the possibilities of what I could come up with are endless! You're Welcome, and I'm sure I can figure it out, just need time.😊

Can’t you sub coconut oil for the butter? Different melting points but I’ve done it with other recipes and it’s been good.

    • @PinkLady54
      @PinkLady54 2 ปีที่แล้ว

@@lesliegreen9944 yes You can :-) butter is easy.
though sometimes the dough can't hold the coconut oil like butter & some weeps out but still good.
problem is the whey (dairy) protein isolate. makes the end product more fluffy they say.
No one has been able to offer any viable work around as of yet. :-(
She is not the only vlogger who relies heavily on it. I understand it does what they need.
I guess I need spend the time & failed batches to find that sub ;-) but since I've never had it... can't be sure what it is actually doing so hard to replicate.
Ah well... perfect cookies may always be out of us dairy sensitive folks.
I have been watching WTF by the molecular gastronomy folks at Modernist Pantry so it is possible they will cover something...

It would be expensive yet you can treat yourself once a month using Ghee butter which is made to be lactose intolerant due to the way it is made.
