Thanks! I'm trying this right this moment, only with butternut squash instead of sweet potatoes. Just popped them in the oven. I'm just using a cookie sheet as opposed to a "cold" cast iron skillet, and my oven is totally preheated, so I think I'll start checking them at the 20 minute mark.
Sadly, I didn't have any fresh rosemary on hand, so I'm using the crushed (dried) version - not nearly as good, but it's what I have.

This looks great. I usually do something similar with a sheet pan and parchment paper, but I never considered using the cast iron skillet. That would work great for smaller batches, thanks for the idea!

I also dont like the sickeningly sweet sweet potato casserole. I just bake them and put on butter and pepper. I buy mens oversized flannel shirts at the thrift store and use them for night shirts with leggings underneath.
