    Hi, thanks for all you do for us. With regard to keeping the color light, I found a recipe for homemade fruit fresh in a 1950s cookbook. 2 tablespoons salt and 2 tablespoons vinegar per gallon of water. When I cook my mushrooms, I use that mix in the pot to cook them, then process as usual. My mushrooms come out much lighter this way with minimal fuss. Hope that helps someone :)

    Hi, Leisa! I'm just seeing this video. I'm a shroom hog. I was salivating when I saw how many crates of mushrooms you had. I'm going to go out noodling around and see if I can find some huge batches for a good price. The more you buy, the more you can haggle. Also, I do all the prepping one day, and then fill the jars and can it the next day. Keeps me from keeling over from exhaustion! :D

    I need to find a 'shroom dealer, too! Wonder what street corner I can find one on! I am so glad to see someone else not afraid to use water to rinse of mushrooms! It has such a bad wrap but makes things SOOO much easier, and isn't a detriment to cleaning them. Thanks, Leisa - I have a feeling this will be a first project for me down the road.
    I like big chunks and I cannot lie :D

      There maybe a mushroom plant in your area, we have a great one about a half hour form our home. Ps I live in Alberta Canada.

    I could absolutely not find jars this past summer. I resorted to auctions. I bought hundreds of awesome jars. I have enough to last me a life time. Lol It was almost like I was addicted to trying to win jars.

    You changed my life when you taught me to can mushrooms, Leisa! Sometimes I add some to a frozen pizza, right between the pepperoni slices. I strain the leftover cooking water through a coffee filter and can it up, too. It gives my soups and stews that extra oomph.

    Thank you so much for this video. I have a 10.5 pressure canner. I got 8 - 1/2 pint jars with mushrooms my 1st time cooking. I just started canning 2 months ago. I’m so excited. Cooking them 45 mins

    I have never canned mushrooms but have wanted to try them. Instead I found a great deal on mushrooms and bought a bunch and since I have had just recently bought a dehydrator so I went that way😉
    I have tried them in a dish and I LOVE them! I love the texture that they have. So I’m not sure I will can them. I have a limited amount of space so I love the idea of dehydrating because of the space it saves me. That way I have more room for my canning ventures!
    I have some very old jars that I love as well, I have a square canning jar that is a tiny plaid which I think is adorable. I don’t use it for canning now but have in the past and it did fine but I just don’t want anything to happen to it.

    if you have an egg hardboil egg slice use that to slice your mushrooms it makes it so easy and the slices are the same size. you can also use the same slicer to cut up strawberries.

    In speaking about rusting rings, I had a jar of green beans that failed to seal a few weeks ago and when I removed the lid to have them for supper that night there was a flake of rust on the sealing compound that I assume kept it from sealing. 😳 this has caused me to rethink my “it’s just a little rusty” philosophy. Thanks for the fun canning videos.

    Never considered mushrooms for canning but this looks way easy thanks for sharing.first time our Morman friends were teaching us to make jam we did 12 cs of strawberries. 4 adults and a tiny kitchen lol

    You inspired me to can mushrooms for the first time! I live alone so I did half pint jars (the squatty, cute jars) and I am in LOVE with how they turned out! I can to help my mom 80 y/o mom make easy meals so I am going to can more for her and my step dad and I'm going to try French Onion Soup!! LOVE YOUR VIDEOS!!!!

    I have already made these and the stock. The stock is amazing! When I made mine I used a metal Reasonable coffee filter and it worked really well. I just had to rinse it of and keep going.

    I like the way you think! I have bought all my jars used. Unfortunately until I found you I didn't know what to do with them. Thank you all I need now is a canner. I have water baths and I know how to make jam done it for years. But I want so much to do so much more.

    I am planning on canning the wild chantarelle mushrooms we collect in our woods each summer. I have seen them once in a farmer's market for $30 a pound! It's not unusual for us to have several 10# days each year.

      I'm fortunate to have chanterelles on our property. They are just starting to emerge with all the moisture and heat here. So I'm super excited now that I know I can can them!

      @@leadingbyxample I'm just about to pull my second canning session's from the pressure cooker. We went camping earlier in the week and nearly filled a 48 quart cooler! I have not opened and tried the mushrooms yet, but after that amazing find I've been canning in loosely packed pint jars. I just don't have enough 1/2 pints. I do know that only button mushrooms are approved by the USDA for canning and I am assuming that is because there is no way to tell if the home canner is actually using a safe mushroom, so we are on our own with this one. The filled jars are absolutely lovely.

    Thank you so much for thr shroom video. Wish it had been out before I did my first jars of mushrooms. Did not cook them down first and when they canned of course they shrank...now more fluid than shrooms in jars but still very tasty

    A thought on straining the broth: might go faster using a jelly bag over a "bucket" or line a large colander with a couple of tea towels over a stock pot

    I can't wait to get to do this! I'm presently dehydrating some mushrooms to make mushroom powder. I don't like the texture of mushrooms but I love the flavor. My husband likes mushrooms as much as you seem to. So when I can get my hands on a larger batch I will be canning them. I had to chuckle at you having two lids sticking together. A couple weeks ago I mentioned my first ever canning, beef and one jar didn't seal. It turned out that I had two lids on it and didn't notice the thickness like you did. (I have been more careful in the 2 canning sessions since then.) The lower lid did seal, but we did still open that the next day and used it in our chili. Thanks so much for sharing your expertise with everyone.

    Thank you for another great video... I just took out my ground beef from the pressure canner and it looks perfect. It's so interesting that you wash mushrooms... My Father-in-law was the President of the Mushroom grower's association in the Fraser Valley, B.C. for many years... and so I think he was an expert also he was a professional mushroom grower... and... He always said NEVER wash mushrooms!.... So, I never have... We use a "mushroom brush" to brush off the loose particles... Mushrooms are not actually grown in soil. I love mushrooms... If you can get brown mushrooms that are open... that is, they are so advanced in growth that they are open flat they have the very best flavour, but they are not sold commercially. You could only get those direct from the grower. My Mother-in-law called them "Spaghetti Mushrooms". I can see it would take a while to brush 5 cases of mushrooms though, so I understand you washing them...

    First time I've seen a REAL butcher block cutting board in use. End grain is the only "true" butcher block.

    If your new pot has a pull out strainer....we use those in the south for crawfish boils. Enjoy!

    Were you ever able to find out how many pounds were in a case, Leisa? I can get cases of mushrooms at the local restaurant supply store that also sells to the public but wonder how they compare weight-wise. I would sure love to have a year's worth of home canned hefty mushrooms like yours. Since my new stove has an odd burner configuration I'll have to change my usual setup and think that I'll drag out my 18 qt electric roaster to do that pre-cooking step. I have about a third the counter space you do so creativity is the name of the game. Thank you for the awesome video, that was so nice of you considering how much work you went through for those five cases!

    Leisa, my jaw dropped at that amount of mushrooms! They were gorgeous. I realize you probably like both, but if one time you had to choose, which would it be: dehydrated or canned mushrooms? Remember Alton Brown? He did an experiment; did washed mushrooms absorb water? Conclusion...no. So, I always wash my shrooms, too. (:

    Ive been able to get free dif kinds of fresh mshrms periodically thru local Sr Ctr & ECHO store frm nearby mshrm farm. Thank you much for ur canning mshrms video. It is a tremendous & invaluable help to know how to can these. Definitely a $$$ saver considering continued rising food costs 👍. Very valuable food item for FEP 👍👍👍. Love the mshrms. Yum 😋😋😋. 😘

    Oh, my! How did I miss this video? I love mushrooms in just about everything. I can't imagine having that many on hand! One question ... can you can them whole? I would imagine that near-equal sizes would work best. And, yes, those huge ones would definitely be stuffed!

    Great video, I love mushrooms, I sometimes buy the cans and they are expensive. Where do you buy your mushrooms? We canned tomatoes , jams , fig jam and fruit juice.

    We buy about 20lbs when they are on sale under $1 a lb here and slice and freeze them. I’ve never canned them! I need to!

    Thanks for this. I am just getting into spawning mushroom and was wondering if I can can the edible one. I'll be drying out the medicinal ones like turkey tail and bear's head, they'll be ground into powder and put into snacks to mask the bitter taste.

    Commercial mushroom growers use a sterile medium to grow the mycelium, from which the fruiting bodies (the mushroom) grows. So it's not really dirt.

    What about using a heavy duty hot plate for your canning kettle leaving the stove for the prepping?
