    I strain the broth with coffee filters, then reduce to intensify the flavor (and save on jars), then can it up. :)

      I do as well , add it to soups and sauces , or use it for cram of mushroom soup .

    I’m doing 3 cases today . Bella mushrooms. I got them for .99 cents a 8 oz containers . The way the worlds going I was shocked on the price haven’t seen cheap in a few yrs . GODBLESS sweetie

    I wouldn’t even wash them, myself. At most I would brush off anything that caught my attention but I also know that mushroom are raised in sterilized substrate, so a little ‘dirt’ doesn’t worry me. I actually love pickled mushrooms as well, something else that is shelf stable. (Also) someone suggested boiling down the mushroom water for stock. I would love to try that and see that in action. That would be excellent!

    Great video...I would use the water the mushrooms were cooked in as any grit from mushrooms sink to bottom of pot.

    Now that I’ve had my freeze dryer for a while I am now going to freeze dry mushroom broth This is going to be my first run with this. We’ll see how it turns out.

    If you wash the mushrooms, the black bits in the broth is most likely gill bits wouldn't ya think? I'll be using the broth to fill the jars with maybe a bit of soy sauce. YUM

    You know I've watched this video over and over and over... yep.. We can't get fresh mushrooms here in amounts like that, just little containers at the grocery store for 6 bucks a container... NOPE. Plus, I hate fresh mushrooms, feel and taste like styrofoam to me, except Morrells, I'll hunt and eat those all day. :D Just wanted to say I'm jealous. I would sit and eat a pint of these right out of the jar... No problem. Hey, a hint on weighing down your mushrooms so they stay under the broth to cook, I use my steamer basket to push my dumplings and such down when they float too much in a deep pan...lol Lazy mom with too many male children, I cook chicken and dumplings, noodles, etc., in a monster stockpot, 32 qts at a time. 8 grown boys, so leftovers after big meals aren't much of a thing around here.

    I love love love mushrooms also I have never canned just mushrooms but when Aldi has them on sale I do can my "cream of"mushroom soup, without cream of course and you can add cream when you open it but I use it mostly for my cooking instead of buying name brand cream of mushroom soup mine is so much better. It does use clear jell I also do cream of chicken and cream of celery to keep on my shelf. I got the recipe from "Chickens i the road" website a few years ago it was posted by Dee Dee Rader.

      This is the recipe i use
      I use this as is - no cream or milk needed. I usually make a triple batch and I have found that if I chop some of the mushrooms in about 1/4? dice, and some finely chopped in a food processor, it comes closest to commercial soup.
      Difficulty: Intermediate
      Servings: 5 pints
      Ingredients
      1/3 cup butter
      1 pound mushrooms, chopped or sliced
      3/4 cup Clearjel
      2 quarts meat stock (beef is really good - I use reduced sodium)
      1 T. salt (I do not add)
      1 tsp. lemon juice
      Directions
      Melt butter. Add mushrooms and cook until browned.
      Add meat stock, saving enough to mix with the Clearjel.
      Make a paste with meat stock and Clearjel.
      Mix all ingredients and heat until it boils, stirring often.
      Put in jars, leaving one inch headspace after debubbling, and process in pressure canner for 45 minutes at 10 lb.pressure (adjust for your altitude).
      When opening to use, add equal amount of milk and soup.
      Very good!

    Thank you for this great video! I appreciate how simple you make the process. I do have one tip for you.... If you place a damp towel under your cutting board it won't slip around so much. It also adds a level of safety as your knife won't go everywhere :)

    Great video lisa,very well done.i just canned 10 jars and everything went fairly good.only issue i have is that 3 of my jars have a low head space,and the mushrooms are not completey covered in water.will those 3 jars keep ok or should i use them right away?

      Thanks lisa,i figured out where i went wrong.after the 50 minutes was up i releived the pressure by holding the weight up with a fork.apparently that creates a siphon and sucks the liquid out of the jar.

      @@1plotthound Never ever, ever do that. The depressurization is part of the processing time. Always let your canner depressurize on its own.

    Just canned 13 pounds of mushrooms. I had 3 jars lose almost all the water i put it. Not sure what to do or how to fix this.
