Can we use water instead of vodka?

Water won't evaporate fast enough, and can make the isomalt too sticky! Alcohol works because it will dry so quickly, and react with the heat to bubble up.

Water doesn't dry fast enough for this effect and will leave it sticky, so I've only ever used alcohol with this method. It may take some experimenting to find an alternative!
