- In this vlog I will show you how to make cake decorations using Isomalt which is a sugar substitute. I prefer working with isomalt that sugar because it is easier to melt and can used again and again.
You can make:
Shells
Icicles
An isomalt sail
And some general patterns

Cuánto tiempo dura el isimalt en un pastel de Frozen(con cristales)con Chantilly?
Nice vedii
Nice work, keep it up, best of luck
Thanks a lot
So to summarise; 250gr of Isomalt + 75ml of water. Letting it cook until its the right temperature and thickness.
You simply cannot learn about isomalt designs in summaries hahaha
you dont need a candy thermometer with isomalt. It doesn't behave like sugar and is already stable once at the melted stage. otherwise cute video
How do you add flavoring? If I add honey will it prevent it from getting hard?
U cannot add flavoring it changes the texture. At least I have never tried that.

Wonderful stay connected
Beautiful. I am wondering about using olive oil to mix the gold to decorate the sail. Does it ever dry to the touch? Does it affect the isomalt sail at all? I heard of using alcohol, like vodka, to mix the gold. Why do you use oil?
Use bottled lemon juice its works the best and dries quicker
I thought that Vodka would dry more quickly because of the alcohol content. I have heard of lemon juice as a conduit or whatever you want to call it, But I thought that alcohol base would draw up more quickly it wouldn't damage the isomalt.
Oh absolutely vodka works best. I thought you were looking for a no alcohol option.
Please can you tell me where to you buy your isomalt. I live in Durban South Africa
You can try any cake shop. They must stock it.
@@culinaryvlogsbyz Thank you so much .I really appreciate your advice.
Hope you find it soon. You should also try shopping for it online. Might be quicker and easier to find.
Any tips if I don’t have a silicone mat?
You can try doubled parchment paper. But allow the isomalt to cool a little before using as ut could shrink the paper.
How many days storage in fridge or without fridge ....?
It can be kept out of the fridge for upto 6 months. However if too hot and humid place in the fridge. It tends to discolor depending on the colour of the isomalt if left too long.
@@culinaryvlogsbyz thanks 🙏🏻
How long you can store isomalt n how to store
Once it is set and hard you can store in an airtight container for upto a month or 2. Usually discolouration occurs when it's gone bad.
What. Is ice a mold?
Isomalt...used in cake decoration. Sugary crystals that are melted to form the amazing decor like the ones in this video
