- After searching all over TH-cam to find how to make a Sugar Sail without using IsoMalt, I coulldn't find anything that was too useful: So I decided to make my own version after so much research; to help other Cake design enthusiasts.
Recipe..
150g sugar
50g water
25g glucose
Recipe:

I just tried it, I used corn syrup instead, this is my 2nd try, I used homemade glucose syrup 1st. The testing was perfect, my sail is drying now 😀😀, Thank You, Thank You. I made a small batch
150g (1.5cups) G. Sugar
40g (1/3cup) Water
12.5g (40ml)Corn Syrup

Glucose Syrup
2cups Caster Sugar (granulated sugar)
3/4cups Water
1 tsp Cream of Tartar
1. Add all the ingredients to a saucepan & let them simmer as you stir till all the sugar is dissolved.
2. Turn the heat on low & cover the saucepan then let the mixture simmer for five minutes till it thickens.
3. Pour in a jar and let it cool then cover and store in a cool dry place.
(Note when it cools it will get very thick and harden but that's how it should be.)

I saw in another video were they let it slightly cool to where it is pliable, shape into a small ball and put on the end of a straw and carefully blow to make a bubble.
I think this will fit my bakery perfectly ,thanks ☺

It's allowed, to add fruit 🍓🍓 but not cut fresh fruit, cos the liquid in the fruit would start melting the sail
