    Ohhhhoh! This looked so good! I made it last night for dinner!
    I am fairly unwilling to cook the cauliflower and squash out the moisture (being rather lazy)...so I do what I learned from Chef Buck...rice the cauliflower then dry "fry" it in a pan until it no longer sizzles. I had to substitute coconut cream for the heavy cream. Dang! It was delicious! My son thought I had put quinoa in the dish...the cauliflower had some toothiness left from being dry- fried rather than steamed. Excellent recipe makeover! You really are a hoot to watch!

    Made the low carb version for myself and fiancé and he absolutely devoured it. He doesn’t have to do low carb, but I do and he is on board 100% - lost 21lbs so far and your recipes are amazing but even more so- you are entertaining and so so fun to watch!!     Wesley, I love your videos. I just found you about 2 weeks ago and I’m so glad I did! You have such a beautiful personality and you are so fun to watch! I have a suggestion for you and my fellow viewers. When I cook cauliflower rice, I grate it and cook it in a skillet low and slow. It dehydrates the cauliflower and it’s not as soft when it’s done. I do babysit it a little bit by I like the results waaaaaay better. I don’t have to squeeze any of the liquid or nutrients out of it, so it saves me work also. Happy cooking!     Hey I saved this recipe a few months ago. Just now trying it. I had to cook my bacon to get the fat, so I crumbled it on top with the topping.
    It’s still in the oven. Can’t wait. Just a few more minutes! I’m sure we won’t be disappointed. I’ve enjoyed making many of your recipes and have never been let down yet.

    Have you ever heard of a spice called asafoetida? It has a very strong oniony flavour. Maybe it’s something you could have a play with so you can have “onion” without carbs.

    This is delicious. I made it last night and it is just so flavourful. I will definitely be making this again. I think it will become one of our house favourites! I did substitute lupin crumb for the pork rinds since I don’t eat those and it worked really well. Thanks for sharing this.

    This was so so good!! Love how you compare recipes and your honest taste results!!
    With this recipe, I left the moisture in from precooking the cauliflower......maybe it was from cooking in a high
    altitude because it was not too much liquid. I had never had pork rinds, so I wasn't sure about using them.
    You were right, using the plain ones gave the exact amount of crunch as a topping. I love cooking with cast iron so that is also what I used.

    This looks delicious! I recently made a zucchini casserole with somewhat similar ingredients & used pork rinds in place of Panko as well and you are right, it's a GREAT replacement! I didn't do a cooking video but it did appear in one of my "What we've been eating" videos.

You were so funny as you read the description on the original recipe as not being too heavy on the cream and cheese; then laughed and said that would change!       Hello, my friend and doctor or low carb-ology! ("Carbiologist?" lol) I have a special request/challenge. For days now, I have been in my test kitchen trying to come up with a decent low carb english muffin-in-a- minute; to no avail! Some of my key players have been almond flour, coconut flour, flax meal, egg, leavenings...the usual cast of characters. But I still have yet to come up with anything that resembles an english muffin in taste, texture, etc. Yes, they look like one, but the similarity ends there! I have a feeling there must be a magic ingredient like psyllium powder or xanthan gum that would bring it to the next level? I just can't seem to find that winning combination. If you would add this request to your on-going list, I'd sure appreciate it! Blessings...

    Went to my library, found the Southern Living 1984 Annual Recipes (I’m old!), and of course they had TWO zucchini casseroles listed. Neither have rice. Cheesy Zucchini Casserole (Classic Swiss-cheddar-bacon-chives-1 egg yolk-bread crumbs), and Cheese-Egg-Zucchini Casserole (canned green chiles-onion-tomatoes-3 eggs-Jack cheese-no crumbs).     Great video. Here's a tip I learned on TH-cam to "rice" cauliflower. You put the florets in a blender full of water...pulse lightly till you are happy with the size of the bits and then sieve off the water.😉

    Definitely going to try this. Have you tried the frozen riced cauliflower? It is a little more firm (I suspect the manufacturers use the stalks left over after selling the florets). It might add a better rice like texture to this recipe. TIP - If you try the frozen riced cauliflower, I think the Birdseye brand is best. The others have a strange flavor - Just my opinion.

      Peggy Bunting I agree. I use the frozen riced cauliflower from Trader Joe's. Great taste and doesn't get too soft. Holds up like perfectly cooked rice.

    I use the sauce youre making with added shredded cheese and add cooked cut up chicken breast and cauliflower and bake. Omg so good. This looks really good. Thanks for sharing.

    Love that heavy cream and cream cheese sauce! Pork rind / bread crumbs are perfect on this casserole which as a Texan I grew up on.

    No joke, as soon as I finished watching this, I made something similar to this for dinner. Just now! I took the recipe you revised and had to revise again because I didn't have quite everything on hand. (Pork rinds are normally here, but we ate them all already lol) So I made a smaller version of this and then stuffed it into some green peppers for a new idea all together. I have no clue if it will be delicious yet - they are still in the oven. But if so, I'll be sure to reply and let you know!

    I wanted to make this a main dish casserole so I added ground chicken thighs. So goooood! It increased the volume so I will be eating it for lunch for several days!

    I gotta try this. I make a cauliflower 'mac n cheese' with bacon, Swiss cheese, and heavy cream that's really good, but I'd love your take on something like that.
