  • Not everyone knows how to enjoy chicken feet aka phoenix claws. I for one, do not know how to. WhenI was a young girl, my mom kept saying kids shouldn’t eat them because our hands will tremble if we do so I always steer clear of them. What about you?

    Ingredients:
    Serves 6
    Deep fry then soak chicken feet in ice-water
    ----
    750g of chicken feet
    1.5 tablespoons of dark soy sauce
    Braising the chicken feet
    ---
    12 pieces of Chinese mushrooms
    1 piece of red fermented tofu
    1 tablespoon of sauce from red fermented tofu
    2.5 teaspoons of sugar
    2.5 tablespoons of spicy broad bean paste
    5 cloves of garlic- minced
    1 tablespoon of Chinese cooking wine or Shaoxing wine
    1 thumb size ginger - sliced into thin pieces
    1 piece of chilli padi or bird’s eye chilli
    A generous dash of pepper
    Thicken the gravy with some cornstarch solution (you can thicken the sauce per your own preference)

    I tried this recipe by following marination, then deep fry, then i saute garlic ginger, then mushroom & chicken feet deglazed with Shao Xing rice wine, add more black thick sauce & water from soaking mushroom, mix well and put into a crockpot, lastly season again. Overall good recipe & good tip on deep frying the feet

    We in Egypt get rid of chicken legs and put them for cats and dogs so what is useful to eat

      +Paul Ling Hihi. It’s called 辣豆瓣酱。you can get it from the supermarket (assuming you’re staying in Singapore or Malaysia)

      Hihi! You soak them first so that they can puff up better and also to get rid of the excess oil so that the feet can absorb the sauce better when braising

    Why do you even need to season the feet with dark soya sauce? My method to prevent all those splashing is first to coat the feet in corn starch. My recipe calls for 12 ingredients and my son says the chicken feet is the best.

      @@spicenpans I am the father, this recipe started from accident when I try cooking from General Tso and the taste was good. With this as a base I add in garlic and ginger paste, black bean paste etc. You should try it sometime and you won't regret it.
