- This week, I'll be cooking Chinese - Style Braised Chicken Feet. It's smooth, succulent, savory, and good for your skin too 😜😉. I personally loved chicken feet as a child, then I was disgusted by it (I think most can relate 🫣) as I was growing up and then I learned to love it again. Do you have any food that you just can’t seem to like, but you try to love it?
Ingredients:
1kg - Chicken Feet
1 tbsp - Dark soy sauce
2 tbsp - Soy sauce
1tbsp - Sesame oil
20g - Ginger
40gm Ginger
4 cloves - Roasted Garlic
10 pcs - Shitake mushroom
3 pcs - Dried Chillies
2 tbsp - Fermented bean paste
3 tbsp - Soy sauce
1tbsp - Oyster sauce
1tbsp - Dark soy sauce
A dash - White pepper
1 tbsp - brown sugar
Water (enough to cover the chicken)
1 tsp - Chicken buoyant
Salt

Another method: Don't fried the chicken feet. Basic Seasoning 1. Fried Garlic 2. Oyster Sauce 3. Necessary Chinese Seasoning Herbs (Teo Chew Style) 4. Dark Soy Sauce 5. Bottle Abalone Sauce (To Taste) 6. Rock Sugar or brown palm sugar 7. Light Soy Sauce. 8. Green Onion (sufficient). No need to marinate. Straight braise in high boiling and low heat 2.5 hours. 9. Dry Chilli (Optional) 10. Soaked Dry Shitake Mushrooms. Serving: Dash of white pepper powder (ajinamoto brand) and chopped green onions
This is the tiger skin method. Fried and soaked.
