Just so you know, leeches are still used in medicine today. They can be very useful for certain things such as for bringing blood flow back to an area of the body.
Miasma theory. Predated the germ theory, theory that diseases were caused by bad smells. Vinegar is a good antiseptic agent, if they were dealing with victims of bubonic or septicemic plague I can see it working. If it was pneumonic though it would depend on when they went into the house. It's a bacteria - Yersnia Pestis.
We're still just winging it. We don't know how medications work on the brain for instance, we have hypothesis but we've never been able to study the interaction to definitively say. What we don't know about the human body is considerably more then what we do know.
