Potli la masala is not used in Hyderabadi biryani. Potli ka masala contains, pathhar ka phool, khus roots, javiitri, star anise, and some more things. It's used in mutton/chicken khorma Or Paya. Just because sometimes while boiling rice the sabut garam masala is put in potli it doesn't mean it's potli ka masala. I hope you got it.

Khurshid bhai please dont misguide people. You have no idea what is Hyderabadi biryani. Im Hyderabadi for at least 11 generations. Elder than you. Please either learn from authentic old people of Hyderabad or stay away from Hyderabadi food. First fore most there is no Hyderabadi biryani masala. Its just basic for mutton sabut garammasala ie loung, elaichi, badi elaichi, darchini, Barista( barista is also fried in above sabut garam masala, apart from going separately in marinade) Haramasala paste,mirchi powder, haldi powder and khatta dahi( very essential for taste) oil( barista ka oil) . This is your marinade. siah zeera and same sabut garam masala for rice. Haramasala paste Green dhanya chopped and pudina chopped. Saffron water for rice. Lemon for marinade and rice water. Variations is some people put a bit of powered garam masala of above and green cardamom powder) some people omit mirchi powder or reduce it a lot. Some times whole green chilli in rice. A little bit of sliced raw onion in marinade or add to meat and mix just before keeping for dum. Apart from these above there are no variations. Key and critical flavors are high quality siah zeera from iran, this should flavor the rice water well, barista should be fried with a little bit of sabutgaram masala . Use of the barista oil in marinating meat as well as layering the biryani. Dum with coal on top of vessel lid is must as this infuses the oils of the fragrance of spuces into the rice through high pressure dry steam due to right dum technique Biryani should be light not toomuch masala. At least 30% rice should be white masala shouldn't be too dark nor the meat. No tejpatta, no javitri, no jaiphal, no alu bhukhara, no tomatto, no dhania powder, no zeera powder. Biryani is only about right lightly flavoured mutton and good quality spices, slight khatta dahi is essential for the Umani flavor and proper dum on coals at bottom and top is essential
Hyderabadi biryani main Tez patta na hi hota.... nahi hi Chawal main aur na hi meat Marination main.. ap dal sakte hai lekin dhyan rakhe yeh swad change kardega aur asal Masala ka mazaa nikal dega...
