That's perfect to grate and freeze the cassava, that way it does not go to waste. I personally don't like all the gartering, so I buy it frozen from the supermarket.

I am in barbados when i have a lot cassava i grate it and freeze and it works very good when i bake the pone

I am from Trinidad it looks good but we also add pumpkin, milk, and blackpepper and oh' what a taste ❤❤
The good thing about the Caribbean is, we all cook the same thing, we just add a little twist to make it our own.

Freeze your cassava overnight to skin easily and to grind in a food processor. After thawing it’s better.
