Such a perfect creation...no doctoring up needed. Unless you have such an abundance that you can't eat all or the quality in inferior that needs to be enhanced.
This is a great simple recipe. Mangos are easier to cut, less waste, with a fillet knife. When good and ripe, you can push the pealing off with the back of the knife as you move the sharp edge thru the fruit, barely even cutting. I find the red ones are more sour and better for me. (I really like your videos with the soft music like this one).
I try this recipe adding bananas. Also, because I dont have a food processor, I did all in the blender. And..... it goes very well. Is a good alternative to regular fatty icecream.
@NutritionRefined - A suggestion for your recipe. Save the flesh from half to a whole mango, depending on the size of the batch being made. After the gelato has been frozen then churned in the food mixer, add slivers/chunks of mango and give a gentle stir to spread the fruit evenly. Once it comes out of the freezer for the second time, Hey Presto, gelato with real fruit chunks. Trust me, I make mango ice cream with only mangoes and cream, no sweetener of any kind. The gentleman is correct, it depends on the ripeness and sweetness of the fruit being used. One tip for peeling and defleshing mangoes. Take the knife and place it across the indentation where the mango was attached to the stem. Place the knife at the correct angle and apply pressure, it will manage to split the mango seed along the length of the mango. Then take a spoon, which ever size is easiest and scoop the half of the seed out. Then use the spoon to scoop the mango flesh out of the skin. It also means that there is less mess and almost no mango flesh is wasted.

Place the bottom or narrow part of the mango against the outside of the glass and push it down all so you end up with just the peel on your hand. The mango flesh will fall into the glass in one whole piece and not much is left on the peel.

This looks very tasty :) I have a suggestion too, this is something I do for breakfast every day. Try 250 gram of frozen mango, 2 sliced frozen bananas and one non-frozen banana (so 3 in total), about a tablespoon of fresh lemon juice (or even a tad more, to taste). Put all of this into a food processor for about 3-5 minutes, stopping sometimes if needed. This "nice cream" tastes amazing on its own, but it's also good to sprinkle some cacao nibs over it. Another thing I like to do, is to make "cookie dough", out of 1 dl of oat flour, about 2 dl of pitted dates, 1 teaspoon of cacao powder, 1 teaspoon of vanilla powder and 3 tablespoons of water. All of this goes into a blender and then I split the dough in half and save one half in the freezer for the following morning (take it out again like 30 minutes before the meal). The other half I just divide into little chunks over my morning ice cream. The combination of the ice cream, cacao nibs and cookie dough is AMAZING and such a great start of the day =)

i was also thinking of using coconut milk or cream to keep it soft or maybe gelatine might work, but you should not use maple syrup or honey etc these only mask the flavor of certain fruits ,instead use simple syrup to bring out the fruit natural flavor

just made a small trial sample for my first time, used a handful of frozen strawberry, a banana piece and a melon piece ,lemon juice, vodka, starch, cream and simple syrup, ohh my god it came out lovely in color texture and taste after i tweaked the lemon and syrup but im still waiting for it to freeze more and then we shall see if it retains this texture over time or not but so far it's looking beautiful
I just came across your recipe now as just yesterday I had made my own a little different. I had frozen chopped mango then blended together with coconut cream for instant ice cream. I didn't use any sweetener and it was just the right sweetness for me.
HI. I did the same way with frozen strawberries and cooked it until there was little water in it .And for the sweeter taste i add strawberries syrup . After from blender to the dish mine was not thick like yours.What did i do wrong? By the way i like to watch your videos and thanks for your vegan cooking.

U hav my sympathy!! My daughter was born 20yrs ago ALLERGIC to ALL dairy!!! NOT LACTOSE INTOLERANT, ALLERGIC!! To the protein actually. Mozzarella cheese Is ok for her cuz the protein is boiled out of it. Now u hav other options like soy, almond, coconut & cashew milks! Back then, it was baby soy formula until she was 3!!! Good luck adjusting ur diet, its hard, but CAN BE DONE!!!

There's no dairy so yes, a person with dairy allergies could eat this. You could use agave nectar or simple syrup (boil equal parts sugar and water together, stirring constantly until the mixture becomes syrupy. Cool and voila! ). Enjoy! :D
Can I substitute the sweetener (maple syrup I cannot find good quality organic maple syrup where I live) with organic honey 🍯 and can I add a little splash of vanilla extract?
If you only use the coconut cream and leave out the water, you will not get the crystals and save yourself having to cut up and blend to remove. That is a lot of extra effort that could be avoided. Just keep the coconut water for drinking or smoothies, etc.
I love mango gelato, but since I don't have a food processor, I am left with two options I am afraid: 1) buy a food processor or 2) buy ready made mango gelato from the super market. Right?

If you have a Vitamix no need to blend 2x. Just let it run long enough to smooth out fruits

Why don't you use a peeler to remove the peel first? Its so much faster and easier, and there's no waste of fruit

great - try adding a tablespoon of vodka. will produce a smooth result for some reason.
Because alcohol won't let it completely freeze thereby creating a softer smoother consistency

A tablespoon also works amazingly well for supple pie crust making. No more broken crust frustration. This much for a top and bottom crust.
