I see Gnome UI is getting more and more close to the Microsoft's Fluent UI. Not sure if that is intentional or just a coincidence.

There does seem to be some convergence in design language across modern UI frameworks, including GNOME, Fluent UI, and even Apple's macOS design trends. Whether this is intentional or coincidental, I can't say.

True, i guess it's just a matter of decades doing their thing and consolidating the habits and plucking the issues one by one. The era of exploration and disruption of workflow seems behind. Not that i mind, it's a better complain to have than things not working at all

Just give me global shortcuts and my soul will be yours Gnome Team

The GNOME team and the Wayland ecosystem are aware of the limitations regarding global shortcuts and are working on potential solutions. These solutions could include more nuanced permission systems to allow trusted applications to securely handle global shortcuts or expand Mutter’s ability to mediate shortcut handling.
Suppose you heavily rely on third-party apps that need global shortcut support and are experiencing limitations in Wayland. In that case, you might consider using an X11 session for now or exploring other options such as running apps in XWayland.

Switching to GNOME from KDE can provide a refreshing experience, especially with its emphasis on simplicity and a clean, distraction-free interface. Since you're using Arch, you'll be able to easily install the latest version of GNOME, possibly even GNOME 47.

personally never had such issue on gnome 46

Several improvements have been made in GNOME 47, especially for XWayland clients (X11 apps running in a Wayland session). GNOME 47 now supports scaling-aware XWayland clients to properly scale themselves, reducing or eliminating blurriness for X11 applications running under Wayland with fractional scaling enabled.
