1) Preheat your oven to 170°C/ Gas Mark 3/ 150°C (fan) 2) Add 110g melted & cooled unsalted butter and 140g granulated sugar to a large bowl and whisk them together. 3) Add 1 large egg, 1tsp vanilla extract, 3tbsp strawberry jam and a couple drops of pink food colouring and whisk until combined. 4) Fold 250g plain flour, 15g plain flour, 1/2tsp baking powder, 1/2tsp bicarbonate of soda and 1/2tsp salt into the mix until just combined. 5) Refrigerate for 2 hours. 6) Roll 60g of the dough into a ball and place it on a cookie sheet. 7) Repeat step 5 with the rest of the dough, spreading each ball 4" apart. 8) Bake for 12-14 minutes then allow them to cool. 9) For the icing, whisk together 90g softened unsalted butter, 90g room temperature cream cheese and 1tsp vanilla until smooth. 10) Gradually whisk 250g icing sugar into the mix. 11) Pipe the icing onto your cookies and smooth them out. 12) Crush 40g shortbread cookies in a blender. 13) Pour the crushed shortbread into a bowl and mix with 1 sachet (11g) strawberry jelly mix and 10g melted unsalted butter until crumbly. 14) Sprinkle the crumble mix over each iced cookie. 15) Enjoy!
