Looking through my ancient recipe box, I actually found the recipes for two "Impossible"Pies that I had cut out of a magazine! One of them is the Impossible Cheeseburger Pie. It is the same, except it has salt and no pepper. After adding the meat mixture, sprinkle with 1 cup of cheese and then pour the batter over it. It doesn't mention bacon or tomatoes, although the picture shows very small slices on some parsley on each serving.
I'm glad I looked through the recipes. I found some from several friends who are no longer here 😢, but brought back some good memories.

In this book there is a cheeseburger pie, no bacon. Sounds a lot like this. Thanks for sharing. 😊

I used to make "Impossible" Pies when I was in college back in the 70s. I don't remember when they came out but it was even before then. There used to be a different recipe ( Bisquick ad) in every woman's magazine each month.
It's been a while since I made one, but that just didn't look right. I remember them having an actual crust and the filling set up after it cooled for about 15 or 20 minutes. I hate when they change the recipe, but that seems to be what they did. I don't remember the Bisquick/milk mixture being thick enough to spread.

Hi Michelle: I had a girlfriend over for lunch and I made the updated recipe. I changed a bit more. Added the same spices only more of them from your new list as well as the original. Added more green onions in the end and used an extra old cheddar cheese Everything else was the same as yours and we really liked it. thank you. Enough for lunch and for dinner that night with my husband. Thanks for your changes. Oh one thing, instead of milk which I didn't have I used 5% cream which we use for coffee. It was very good. Thank you for doing the updated recipe

This sounds like something I made many years ago. Will check my old recipe box+ compare it to your recipe.

I have had Bisquick Impossible pies but I have never made one. This looks intriguing but, like you, I don't want it eggy. I look forward to seeing your fix for the recipe. If I were to make it I think I would chop the tomatoes instead of slicing them to make it easier to get some tomato in every bite.

Thank you for sharing and you are probably correct that does not look like a pie to me you should make a pie shell and then put the filling in. But i would say it would need some fixes and i agree with you about that one. God bless both of you.

I love Bisquick biscuits, and my mother made a really good coffee cake with it; I wish I knew what she did because I don't think that she followed the recipe on the box to a T.
Pies can be almost anything; people tend to misuse names of things, especially in cooking,
until the original have no meaning.
This looks really good. You always choose such great recipes. Your ideas for it are great, I also thought the batter was a little thin.
Again, I LOVE your beautiful cookware!

Looks good- I would try adding in taco seasoning to the beef and maybe Rotel as well (instead of topping with sliced tomatoes) for more flavor. Then maybe top with drop corn biscuits - Jiffy cornbread? - for a dumpling type topping with again more flavor. Taco pie (but that might not be what you were going for and just me)!

Taco would be good. We can’t get Jiffy cornbread here. Ugh! Good ideas. 😊

Hey Jerri-ellen. Made it again, much better. Will remake this soon. 😊. We definitely use more flavours now than a lot of vintage recipes.

I wonder how using taco seasoning and maybe a little sharper cheese would perk it up. Maybe garnish with the tomatoes and a little sliced jalapeno.
