The Easiest Corn Chowder Recipe

  • Hi everyone. This is a delicious easy recipe for Corn Chowder.

    Corn chowder
    This is a slow cooker recipe which we did on the stovetop
    Makes 6 servings
    1 tbs vegetable oil
    2 medium carrots finely chopped
    1 stalk of celery finely chopped
    1 small onion finely chopped
    1 large Idaho potato peeled and cut into 1/2 inch cubes (about 1 pound)
    3 cups low sodium chicken broth
    1 bay leaf
    3/4 tsp dried thyme
    1/8 tsp paprika
    4 cups frozen corn kernels
    2 cups milk
    2 tbs corn starch
    2 tbs white wine
    1 tbs fresh thyme chopped
    1/4 tap salt 5 slices of ready to serve bacon crumbled
    Place oil in a 4 - 6 quart stove top safe slow cooker bowl or medium high heat on stove top. Cook, carrot, celery and onion for seven minutes or until softened.
    Transfer to slow cooker base and add potatoes to bowl. Pour broth over top and add Bayleaf, dried thyme and paprika. Cover and cook on high for one and a half hours or low for three hours, warm until potatoes are cooked through.
    Stir in corn and milk cover and cook for one hour or until he did through in a small bowl, stir together cornstarch and Wine and whisk into soup. Cook an additional 10 minutes. Stirring fresh thyme, and salt.
    Using a potato masher, gently mash the soup until slightly thickened. Sprinkle each serving with a generous half tablespoon of crumpled bacon and serve immediately.

    My version for 1/2 recipe
    Used olive oil
    1/2 tsp of paprika
    1/2 tsp onion powder
    1/2 tsp salt
    1 carrot chopped
    1 celery stalk chopped
    1 onion med or small chopped
    1/2 pound of cubed potatoes
    Cracked black pepper
    Pinch of thyme
    Bay leaf
    2 cups corn frozen ( peaches and cream )
    1 tsp parsley
    1 tsp garlic powder
    1 1/2 cups chicken broth
    1 cup milk
    3 sliced of cooked bacon chopped
    2 tbs of margarine with 2 tbs of flour mixed together to make a paste instead of cornstarch and wine (add at the end)
    Instead of slow cooker we used the stovetop.
    Cook until boiling, turn to simmer, simmer 45 minutes. Turn it back up to a boil and add the mixture of margarine and flour until it’s thick and turn it off the heat.

      @@HerCookbookShelf Hi Chef Michelle! I made the chowder for last Sunday lunch and it was lovely! Thank you for trying it for us all. I made a few changes. I didn't use thyme or bay leaf because the "Boy" aka the husband doesn't like them at all. I used a few other spices he likes, bone broth and heavy whipping cream, (because that's what I had, and added some chicken. We loved it and we have leftovers for tomorrow night! Thanks again!

    Hey Kevin & Michelle thanks for sharing. This one looks absolutely awesome and one that I will probable try real soon. I will have to omit the bacon as its not kosher but other wise it's a win in my books. Again thanks for sharing.

    It looks delicious! I make mine very similar to yours. I've never heard of wine in corn chowder. I use half and half instead of milk and sometimes I'm lazy and don't peel my potatoes (it's just me, and I'm not picky). Some extras I do if I have them on hand are cheese (Velveeta, of course), and diced ham instead of bacon. I have also added shredded chicken if I have leftovers. There are so many tweaks!
