Slow Cooker Chicken Bacon Rice Casserole for a hearty, quick and easy dinner! Simple ingredients!

  • Slow Cooker Chicken Bacon Rice Casserole
    2 pounds skinless boneless chicken tenderloins
    1 pound bacon, cooked and chopped
    2 (10.5) cans cream of chicken soup
    1 packet (3 Tablespoons) Ranch dressing mix
    2 cups milk
    1 cup regular long-grain rice
    1 1/2 cups shredded cheddar cheese
    Spray a slow cooker with nonstick spray. Place chicken in the bottom.
    Mix together the cream of chicken soup, bacon, ranch dressing mix, half of the cheese, milk, and the rice. Pour this over the chicken. Sprinkle the remaining cheese on top of the mixture.
    Cover the slow cooker and cook on high for three to three and a half hours. If the rice mixture becomes too thick, adding a little water or chicken broth or additional milk will thin it out. 
    TO CONVERT THIS TO AN OVEN MEAL:
    Place the chicken bacon rice mixture in a Dutch oven or a large casserole dish and cover tightly with a lid or aluminum foil. Bake in a 325° oven for 60 minutes, or until the chicken is done all the way through.

    Here's a tip if you don't have 4 hours to wait. I make a similar dish often. I throw rice on the bottom of a baking dish. Mix the soup mixture ( I haven't added cheese) .put chicken on top of rice - I usually use thighs. Pour soup mixture over the top. Bake for 45 min. It is delicious. The rice cooks nice and creamy with crispy edges. (My husband loves that bit. ). Sometimes I throw in herbs or spices, whatever you like! Or I'll use cream of mushroom if that's what I have. It's an easy and quick meal! I'm keen to try it Tom's way next time. Looks delicious.

    When using brown rice it just takes a little more water. I do the same thing, and use the same thing to cut up my bacon 🥓!!!!!

    I’m gonna try this w Turkey I froze. I appreciate your videos so much. Great detail & options. I love you’re organized & neat & clean as well because I clean as I go. I really appreciate Melissa having the recipe written out so I can easily reference back to it, so many that do the videos either want you to screenshot the recipe at the end or write it as you go and that’s not always convenient when you’re questioning something and you want to reference back real quick just being double sure so I really appreciate the recipe written out. Even if I’m going to the store and I’m thinking that I forget something I can click on it double check it and yes or no on what I may may not need. Thank you very much you’re both appreciated in my book. Also I wanted you to know I made the sweet potato soufflé fabulous and it is cold too.
