Love the attention to detail mate, I've recently done the same overhaul on my much smaller fiberglass boat, and the amount of work and time I've put into it is as well as 💰 was all worth it in the end. Keep up the good work 👍
Since you did a full gut on the interior of the boat including the hull coring it would be good to establish a datum line around the outside of the hull using the waterline, chine, or hull to deck cap joint. A laser level would be best but it can be done with string lines and a water level. Make sure you are back on a symmetrical and fair line up front to back and side to side. A three point blocking system is probably light for holding everything true. I would add at least two more block on each chine. The datum line will keep you true all through the build. It can be brought back if needed by using long planks and bottle jacks to block up any low or twisted spots.
Done this kind of work before and I really like your videos. 1 thing hook a shop vac to your belt sander, make sure you have a bag in the vac as it made my life much less itchy...
