Cory is one of those soloists who manages to just splurt out a stream of notes that's still listenable

listenable is an understatement here
For me it's because the stream of notes are mediated by substantial melodic phrases so your ear gets the satisfaction of tension and release. If he just played the fast stuff it'd be boring, and if he just played the melodic stuff you wouldn't get the release of tension.

Purple Rain is a slow rock ballad at ~ 60 bpm. She was clearly clapping on every beat. The song is so slow that clapping on either 1 & 3 or 2 & 4 at 60 bpm feels very weird. Try it. The notation here is essentially double time to avoid having to write 64th notes during Cory's fast runs. Btw, the original sheet music is written in "actual" time (e.g. Pur-ple is 2 eighth notes, whereas here it's 2 quarter notes). Ironically, while she's truly feeling the music, you're complaining that her clapping doesn't match up with measure chosen here for notation convenience. Great comment buddy. 😩

The actual soundtrack of Sky meadow in RoR2 was a homage, if i recall it correctly, to Purple Rain, which you can tell by the name of actual song(The Rain Formerly Known as Purple). Prince, the author of Purple Rain, also had a name of The Artist Formerly Known As Prince

Purple Rain is such an amazing song that anyone as talented and skilled as Cory Henry can play dynamically (Even Prince himself didn't perform it the same way twice live). This was the most majestic this song has ever been; Cory and the Metropole orchestra really transcended this song from a rock ballad

In the beginning he says its a special one to him, and you see hee is very sad the first moments of the piece.
IMHO he is playing this song for his father he lost in early years . And that also makes the song really touching. What a great musician but also man he is.
