People don't get why it's so expensive. One would be surprised that most of these restaurants are on the verge of financial break down because they can't raise prices even further. There's an army of chefs, waiters, research and logistic behind.
What you are paying here is an experience.

Geranium is only alive today because they have a rich owner who can bail them out. Most independent restaurants are struggling more than ever, and if you think restaurants have high margins you need to check your facts again.

When I was a waiter (though never anywhere this nice) I always took such pride and enjoyment in serving someone who was paying myself and the establishment for the experience. Too many waiters think their job is simply taking orders when it’s so much more than that. When I go out to eat I hope for the same experience I once tried to deliver.
These servers do that and more. You can truly feel the pride they have in serving their patrons, a pride they should have as giving a patron an amazing experience is a treat,

I think it's used for old wines where the cork has become more sensitive. So you could ruin the wine by opening it normally
Yes we use this technique for very old wine, where the cork could get eroded and fall into the bottle. But you clearly see on that video that he uses it for show because this isn’t a very old wine and the cork is perfectly fine. Beautiful technique though.

it looks amazing, but kinda intimidating since it looks like an art display and you can't tell right away which parts are meant to be eaten, or how. do they explain this as they serve the courses?
It's definitely art and food in combination ;) Almost everything you see is edible, and they will always tell you what is not.

Some day I have to make a trek to Germany to try this out. I’ve been to my fair share of Michelin restaurants (I lived within walking distance to 8 Michelin starred restaurants) but this is next level even by that standard. So creative!

Agree, Everything looks great but I make clear ice myself at home so a Three-Michelin Starred Restaurant should definitely do that in my opinion. It dilutes the drink at a slower rate and is way more professional. Otherwise, everything looks amazing!

The only thing that differentiates people is what they used to eating. And if you claim your cooking is exquisite it must fit everyone. If it does not - it is worthless. Otherwise I can feed you a raw foal with a side of kefir and when you spit it out I will tell you are an idiot who can't appreciate the true taste. It is all subjective, but the fact that you are paying for the idea and not for actual food stays the same.
Well, if you researched the name, you'd find that Geranium is a type of flower (the actual plant is comprised of many different species of flowers aka it isn't just one plant that is considered geranium. Like a rose, there are many different kinds) that is quite numerous especially near the Mediterranean region. So, not surprised that they would humor the diners with a lot of floral concepts considering the name.

I visited Europe for the first time last year and I wanted to have an experience like that but couldn't get the chance and I had no idea it was like this! Now I will definitely visit a 3 Michelin star restaurant when I go back

May I ask, why did he take the top of the wine bottle off?
To drink it? ;D It's an ancient method to remove the cork without pulling it out. Helpful when the bottle is really old, and the cork is likely to be rotten. In this case, it's just to make a show for the guests.
To make absolutely sure that no part of the cork can fall into the wine. Also it looks cool.
and what if pieces of broken glass that fall?
it will be filtered through a traditional funnel and wire strainer with a cheesecloth; will also remove any sediment in cases of really old wine

The wine opening bottle scene is quite rediculous, this technique is used when the cork is old and rotten and removing it the normal way might not work. This is a 2004 bottle....
And he explained that when he opened it that it was to demonstrate a technique used on old bottles.
