BETH'S 4-GENERATION SPAGHETTI & MEATBALLS RECIPE
Serves 8-10
INGREDIENTS:
FOR THE SAUCE:
9 cups (2169 ML) diced tomatoes
2 tbsp (30 ml) olive oil
2 cloves garlic, minced
2 tsp (10 ml) salt
¼ tsp (1.75 ml) pepper
¼ cup (22 g) fresh basil
2 lbs (900 g) spaghetti
FOR THE MEATBALLS:
½ lb (230 g) ground beef
½ lb (230 g) ground Turkey
½ lb (230 g) Mild Italian Pork Sausage, casings removed
2 cups (120 g) fresh torn bread, from an Italian loaf or sandwich bread
1/3 cup (80 ml) milk
2 eggs
1 cup (90 g) Parmesan, freshly and finely grated
1/3 cup (40 g) flat leaf parsley, finely minced
½ tsp (2.5 ml) freshly cracked pepper
½ tsp (2.5 ml) salt
2 tbsp (10 ml) Italian Seasoning
1 ½ tsp (7.5 ml) fennel seeds
4 oz (113 g) of provolone cheese, cubed
METHOD:
In a large Dutch oven or soup pot (you will need a large pot!) add crushed tomatoes, garlic, salt, pepper. Stir. Let simmer for 20-30mins. I know, but trust me, it's worth it! Those tomatoes will mellow and sweeten all the flavors marry ☺
Meanwhile, you can prepare the meatballs.
In a large bowl place the torn bread and pour the milk on top. Let it sit for 5 mins tin order for the bread to soak in the milk.
Then add the turkey, sausage, beef, eggs, parmesan cheese, parsley, pepper, salt, Italian Seasoning and fennel seeds.
Mix it up with your hands until all is well combined. Scoop out meat into an ice cream scoop. Press 1 cube of cheese into the center and cover with meat.
Place on a lightly greased cookie sheet. And bake at 400F degrees (200 C) until cooked through (about 20 mins)
While meatballs are cooking, you can boil the pasta in nicely salted water. (At least 1 tsp (5 ml) for 2 lbs (900 g) of pasta)
Add the fresh basil to the sauce. Once the meatballs are done place them into the sauce to keep warm and marry the flavors. Drain the pasta.
Portion out pasta into bowls, pour the sauce on top, serve with 2 meatballs and freshly grated parmesan on top.
This also goes very well with some homemade garlic bread!
BETH'S EASY GARLIC BREAD
1 Baguette
5 tbsp butter
1 garlic clove
salt and pepper to taste
1 tbsp fresh Italian parsley, minced.
METHOD:
Place butter, garlic, salt, pepper in a microwave safe bowl. Microwave on high for 30 seconds. The heat from the butter will warm the garlic and release its flavor. Add in the fresh parsley stir to combine.
Slice baguette in half, horizontally. Brush the insides with butter. Wrap in aluminum foil and place in the oven with the meatballs to warm white the meatballs are baking. That way they will be ready all at the same time. ☺

Beth, I have always been the worst at making meatballs. I have made your meatballs 4 times now and each time they have been amazing! My kids like them and even asked for seconds! LOL! Aren't those meatballs the best?! HA! My kids LOVE them too! And sometimes I just make them and put them in a large casserole (without the pasta) pour the sauce on top and use them throughout the week for my kids lunches. They love that, popped in a thermos :) So yummy!

This recipe and the photos made me sooo happy Beth! My family is Italian, my father was born in Sulmona,Italy. And we called my grandfather Nonno and my grandmother Nonni. Meatballs are always a treat in my family because it's also a recipe passed through generations. ☺️☺️❤️❤️👌👌🍝

Dear Beth, I tried it yesterday and it tasted so so delicious!!!! Thank you. I had a little twist of your recipe since I didn't have much money to buy all the ingredients. I used chicken sausage and pork for the meatball but i am sure if i have beef inside it will taste a lot better. I put Parmesan cheese inside the meatball (because i couldn't find provolone cheese) and the melt cheese in the meatball made everyone surprised!!!! Thank you for telling me to add the bread because it made my meatball nice and soft. I must do it again and again as this is a really great recipe!

I made this for my Hubby a few weekends ago and he/we LOVED it. He has been craving spaghetti and meatballs but has a sensitivity to gluten and dairy so it can be challenging to enjoy classic meals at times. I made it with GF bread, non-dairy cheese, and rice spaghetti noodles and it was fantastic!!! My hubby enjoyed it soooo much, garlic in and gf garlic bread and all, LOL. Thank you so much for sharing your recipes and stories, you inspire me :)

Love how wholesome and easy this is Beth. Filled with four generations of love! I can't wait to try this out. Usually start my tomato sauce with sweating some onions and a bit of garlic in evoo. Also throw in the Italian seasonings at this point to get everything aromatic. And I have a laborious procedure for the meatballs sweat onions garlic n seasoning then add to the ground meets but I have to try this. Thanks for the beautiful share

It's funny because I bet over time when convenience and modernization won out, many families relied on bread crumbs because it must have been easier, and maybe they were no longer buying fresh bread? It's funny how recipes evolve! I find if you go back a few generations they were always better because they relied on fewer processed ingredients :) It's like taking a bite out of history :)

Beth, this is "EXACTLY" how I learned how to make spaghetti and meatballs from my mom. My mom was the only one that I knew besides me,that put bread , Italian sausage , and crushed tomatoes,and tomato paste in her sauce. Luv your channel. Always looking to see what you're cooking.🤗

Loved the "standard operating procedure" statement! When I make turkey burgers I stick a slice of butter in the center when frying on the pan, thought that was the best idea, so sticking that cheese in the center of the meatball is definitely a must!!!
I have never been a fan of spaghetti and meatballs because of heavy, dry meatballs. Using bread and milk sounds absolutely genius! I also like your suggestions for the meats. Now I can’t wait to try this recipe! I bet it will be amazing. 🤗

my Polish grandmother taught my mother, and then my mum taught me about soaking bread in milk. Is makes the meat so tender! Fantastic for any meatball recipe, burgers or meatloaf :)

This is the best I've ever seen!
I sent my hubby to the grocery for minced beef because I was making a meatloaf for visiting family. When I opened the packages, it was veal! It was the best meatloaf I ever served. I will be making that again! I agree on the three meat combo for meatballs too! Obviously, we don’t have trouble finding minced veal. 😋

This isn't the first time I've heard someone of an Italian background say that garlic wasn't used in tomato sauce recipes.. But I'm with you Beth, bring it onnnn! Lol

I married an Italian and it was the ceaser slad that made me small like a dead animal?
Instead of making my pasta water "taste like the sea" I instead add about 7-10 cloves of garlic to the water which then cooks sweet tender as the water boils and pasta cooks. After you add the meat balls to the pasta, THEN add your salt to taste. I decided to add raw garlic to the pasta water and love it - no recipe instructed me to do so and I've found only one other cook that's figured out this wonderful remedy to bland pasta for garlic lovers.
love meatballs! i always do a lot experiments with them; my current fav one is to brunoise onion and paste the garlic then caramelised them, cool before mixing into the ground meat. i add chopped basil instead of parsley, bread with milk or sometimes i use breadcrumbs if i don't have bread, salt and pepper to taste, mix of ground beef and pork, egg, ketchup (just a squeeze) and cheese inside (i've tried with gruyere and feta before but i didn't add much salt to the mix for feta since the cheese is pretty salty) i usually fry them on pan putting clockwise and sauté a bit of sliced/bruinoised onion (spanish or regular brown onion), a splash of balsamic vinegar then cook it with tomato sauce (i usually make a big batch of nap sauce and use it whenever i want to eat some pasta), add more fresh basil and parmesan cheese to finish the dish :)

AWWW so happy to hear that. Personally for me I've found "home cooked meals" are the glue that keeps the family together. It encourages conversation at the table, puts everyone in a good mood, and shows those you love that you care by "nurturing them" with food that is good for their bodies and souls :) A home cooked meal can do so much more that just "feed people" if you know what I mean :) And you don't need to start by going crazy doing every night. Maybe just pick Sundays and then add Wednesdays, work up to 3x a week and before long you'll be doing it every night because you'll find you'll look forward to having things taste so much better it will be hard to go back :) And you'll enjoy all the praise and accolades that will come from your family :) Best of luck and keep me posted!
