    Don't cut off the stem - it makes a great handle when grating. No shredded fingers! Yummy, will try your recipe, love me some fritters!

    OMG looks good! I have been making them for over 30 years and never get rid of the juice! I add more eggs and 3 times the crackers 4 times the onion and zucchini, and some times a can of Salmon! I put out lemon, blackberry preserves, sour cream, and a side of applesauce

    Zucchini bread is a family favorite, but never once have I drained my shredded zucchini, nor have I squeezed the liquid out. I don’t debate this technique, I just never learned it. I can see why you would drain for items you are frying, such as these fritters, for less splattering. But for baking, I want that delicious liquid baked into the bread. I would guess that my old recipes just add less liquid than most other recipes. Delish Fritters! I Love a tad of garlic in my fritters.

      I knew about draining squashes, sliced egg plant...grated potatoes, also for potato pancakes. Less wet, you use less flour and have more veggie taste.

      I keep trying to decide if I want to make zucchini bread🤔☺️. It looks delicious on alot of cook shows. Now I will definitely try these fritters for sure.

      I have a nylon sock (only for this job) and I have found its the best way to get the water out...also use the flower of the zucchini

    Well I must say. These were very tasty. I did not use egg or cheese because I’m a new vegan, so I substituted with almond flour, crackers and a few seasoning. They turned out great. My mom and spouse said they were good and gave me 5 stars. I was glad they liked them since it was my first time. Next time I will try them with a little lemon zest. Thank you

    Great recipe ! All that water is nutrition that is usually kept in the zucchini and onion. I like all that nutrition kept in my veggies and cooked slowly so it doesn’t burn and the flavors are melded together!

    My husband and I finally got our large garden put in- but we didn’t plant zucchini because we have such a problem with squash beetles. Now I wish we had gone ahead and put it in. This recipe looks really tasty. The farmer’s market in our area is open today. I’ll just buzz over there, get my zucchini and make the fritters. Thank you for the recipe!! By the way, those beautiful zucchini flowers you showed in the garden can be stuffed and fried up. It is so good!

    Try cooking the zucchini flowers too they’re delicious. Egg them, then bisquick, s & p and sauté in butter.

      Try drakes, panko and veggie seasoning and salt. Drench in egg wash then in drakes mixed with veggie seasoning and salt.
      Yummy 😁

    Hey Buck! I made these as I was watching you! I added fresh parsley, fresh oregano leaves, and fresh lemon thyme, and some shredded cheese to the mix...extra red pepper too. I used Amish Farm Dust seasoning, I use it on everything, fried mine in bacon grease, and oh my! These are delightful! Served minecwith sweet potatoe fries from dinner from last night. Wow! Also, I like you are a simple chef...no big fancy anything! Just everything that is most likely to be in every kitchen! Following you for more!

    Great recipe, thank you. For those who might have some difficulties in extracting the juice from, take a cloth and squeeze out the water from the shredded veggie . I found it much easier and less mess that way.

    Love goat cheese and fried zucchini.my mother use to sliced up zucchini and fried them with egg and milk batter along with either corn meal or flour.I forger rather she use flour or corn meal.been so long ago I forget which one she used.anyway her fried zucchini was very delicious.

      Yes my mom used to make zucchini sticks . She sliced them up like a French fry, then dipped in egg and dipped flour. Fried , crispy . Memories.

    I have lots of zucchini in our garden right now, so I'm trying out fritter recipes. I just made yours and I really liked it. I used cream cheese, cause that's what I had in the fridge, plus some chopped fresh basil, which I also had a lot of. Made a yoghurt raita sauce to go with it; very, very yummy. Thanks, guys!

    Goat cheese in zucchini fritters? Fancy and decadent. These must be the most delicious zucchini fritters in existence.
    Normally I eat my zucchini fritters with either a little bit of ketchup or a little bit of marinara sauce but I would have to savor every single bite of these just as they are.

    I made this jut now and it turned out good. I added fresh sage and oregano, and cream cheese since didn’t have herbed goat cheese. Fritters we’re not soggy at all . And I make zucchini fritters every year during the season.

    I just made my first batch of these fritters and damn were they good. I made a slight change and added some dill and parmesan cheese ( I did not have any goat cheese at home). Great recipe!!!!!!

    CB, this recipe is definitely a keeper! Camera Girl, I grew up eating potato latkes (which are like a potato and onion fritter) with sour cream. But I never thought of dabbing sour cream on fritters made from above-ground veggies instead of potatoes. And for the record, I like apple sauce with pork chops too, but it has to be unsweetened apple sauce with no added flavors.

      one of my favorite breakfast foods as a kid was potato and onion fritters...my mom would get up and fry us eggs and bacon and she'd make biscuits or fritters to go with it ...and then we'd head out the door with our school lunch boxes filled with bologna and mayonnaise on wonder bread (lunch was never as good as breakfast!)

    Thx for the recipe, sounds great. FYI Sea salt is what you want to use for your health, not Morton's Also, if you use a clean kitchen towel, it's easier/faster to get the water out : )

    If you keep the stem on while grating the zucchini it is so much easier to hold as you grate the zucchini.. No more nicked fingers.

    Great recipe. I followed yr recipe with abit of twist. I added a one grated potato and some grated cartot and adjusted the powdered spices as well. Turned out to be a hit.

    Very good recipe for zucchini. I substituted items a little bit cuz we are in the country and make due. Duck eggs, diced pepper, cream cheese , saltines and cooked in butter. My husband who has refused to eat zucchini all these years actually enjoyed it.

    Fantastic recipe! I make zucchini bread 🍞 with walnuts, oatmeal, anis, and aromatic species. Also, the zucchini's yellow flowers 💐 are edible; additionally it has great properties. Thank you for your delicious recipe.

    After I drain and squeeze out zucchini, I roll it up tight in a newspaper lined with paper towels. and let it set for 15 min or more. This trick works even better with lightly salted sliced tomatoes for an extra firm tomato pie. Also works great to get all the moisture out of eggplant for eggplant parmesan.

    Just made a batch of these yummy fritters with a zucchini from the garden 🖕🖕 two thumbs up! I used cream cheese instead of goat cheese and of course--gotta use the Ritz! I'll be making these again and sharing this link. Thanks for the recipe! Edited: I forget to mention I do love the sour cream with them and even the apple sauce! I may try a dill dip from fresh garden dill next time.

    i never thought of using crackers for bread crumbs, but what a great idea! Cream cheese, mixed with the egg..never thought of that. Try madras curry and cumin in the mix, served with raita..or even better...use up your cukes with tzatziki! Thanks guys! Imma try this!

    the leafs of all squash are edible. I throw them in salads. w nasturim flowers and other green. as well all squash blossoms can be stuffed and fried. very tasty. I stuffed sine w crumbled lamb and cheese. yummy.

    I also fear pointed knives. Yours is a nice and safe looking! Love this fritters recipe. Seems healthy due to zucchini. Taking out the water is pretty importto avoid any trouble in the oil while cooking. The end result looks so crispy and almost like omletes! Would go great with dips!       I don't know why I ever used a pointy knife--I've never really had a good reason to--I guess if you're deboning meat it's handy, but I've steered clear of pointy knives for a few years now and I don't miss them

    Another good part of the zucchini or the flowers. Dipped in a batter and fried is delicious. If they're big enough they could be stuffed and fried.

    Yum🤗 zucchini is good on a grill with Italian dressing on it along with other vegetables to roast. I mean to barbecue, or even in the oven, it can be very flavorful. Sometimes I just like to slice them up and have them with a really nice salad dressing like Buttermilk Ranch which is really good.

    I worked at a pizza joint and they used to use thin cheese cloth like towel to load the spinach into then squeeze out the liquid. Worked extremely well.

    Learned the salt trick to get the water out from Hillbilly Kitchen. It’s great! No more mushy squash or zucchini!

    You can put it on a dish towel (like a linen on from Walmart, not terry cloth) and put over a bowl or the sink and just squeeze it up, wind it up tight.
    Also avocado oil is high heat point, is healthier and has a nutty flavor.

    I wanted to give you a useful tip since you gave me a beautiful new recipe. If you put your veg in a clean tea towel and twist it, it is so easy to get the water out of your veg with minimal effort.

    I'd bet those would freeze-dry well! I have a recipe for zucchini bites which is very similar, freezes well and reheats great!

    I am salivating 😋. I wonder if you could use pork rinds instead of crackers to make them keto. I was diagnosed prediabetes some time ago so keto had been my way of life ever since and a1c is now in normal levels. 👍 So the apple sauce would be off limits even though like camera girl I would probably like it. 🤗 I'm forever using dark berries with blue cheese dressing on salads. I like the sweet and savory together. This recipe looks like a 🏆 winner!

      blueberries in salad is one of my favorites. CG likes to use pork rinds as a breading substitute, but I think really she just likes to have a reason to buy bags of pork rinds for snacking on :^)
