    This is a sidedish in Turkish cuisine called mücver. We also add parsley and dill. I add finely chopped spring onions as well.

      In Greece, except from the above mentioned ingredients, we also add fresh mint! Zucchini and mint are best friends! ;)

    2-3 medium to large size zucchini
    Grate
    Put in mixing bowl
    Teas Salt for 20 mins (to sweat out moisture before squeezing out in a buy bag )
    1 shallot chopped
    2 beaten medium eggs
    1/4 cup feta cheese or leave it out if wanted
    1/2 cup flour of choice
    Squeeze Zucchini out in nutmilk bag
    Mix all ingredients together with salt and pepper (Herbamere salt)
    Stir
    Fry in olive oil in batches
    Yoghurt topping
    1cup yoghurt
    1-2 cloves garlic
    1 tablespoon Fresh chives chopped

    Ok, so I found these and they are absolutely delicious!! Thank you!! I also saved the juice… added water, lime juice, honey and some ice cubes and had an amazing drink!

    I love how your recipe videos explain the reason behind some steps, for example, the zucchini mix should not be over-stirred to prevent the zucchini from producing more moisture. I wouldn't have thought of that. Thanks for all the helpful tips!

    My daughter made these the other night and they are delicious! I personally did not know how much water the zucchini had and the salt does extract it. The garlic yogurt sauce is delicious. Thank you, Lisa, for sharing your recipes.

    Thanks for this recipe. To "sweat" a vegetable fast, I just put it into a clean juicer and use all the pulp for the fritters. The juice is set aside for something else. I use this exact recipe for cabbage fritters instead of zucchini. Love it!

    I have never been so ready to cook than today and I don’t even have a grater. I was never those that grew up loving veggies but a little long time time ago I started liking them and now I love it. Not really a vegen person but it’s been months I ate meat or chicken. I can honestly tell you there is a difference. I used to stress myself with groceries specifically if you are Muslim. We can’t just eat everything and now I feel relaxed. I appreciate this page or all green people ☺️♥️

    The fritters are so, so good. The yogourt sauce tops it perfectly. My hubby likes them too ... he, who is not a veggie fan. Now that says something!

    I made this recipe two weekends in a row both times without cheese. The family loved it. First time I used almond flour. Second time I used rice flour and I added mushrooms. Delicious

    I just made this with a few twists. I added Everything Bagel seasoning when I mixed in ingredients. Instead of shallot I did onion and half of garlic clove. I added chopped jalapeños to both the mix and yogurt bc I like it with zing. I also drizzled honey into the dip. I recommend drinking the squeezed zucchini juice with the meal. Oh my! 🤤

    My whole family, even the picky guys, loved these. Sweating the shredded zucchini and getting as much water extracted is the key to success with these crispy fritters. Great recipe ❤

    I gave this a try because I had leftover shredded zucchini from making zucchini bread. I did use onion & garlic powder & regular flour just to give it a try. I cooked them in my George Foreman grill for 3 mins. They turned out perfect & I didn’t have to flip them over. Thanks for the delicious recipe. Tip: I also make salmon patties on the George Foreman so I don’t have to try & flip them over. They always turn out great.

    Thank you for this recipe. Being diabetic, I am always looking for keto recipes. Been eating this way since Jan 2019 and have greatly improved my health, kept my A1C in the low fives, and lost and kept off 40 lbs!

    I have been doing my own recipe for ages, I do add Bread crumbs and bake in the oven I eat these with a salad in a wholemeal roll. I have been a vegetarian since early 90's My parents were Italian so I am use to eating this vegetable I will check out your other recipes.

    Made them today👍😁 I substituted with 2tb spoons of nutritional yeast and 1 heaped tb spoon of whey protein instead of almond flour. Very pleased with the result! Family loved it too! Thank you for the Awesome recepie Lisa! 🙏👩‍🍳🌟

    When my mother didn't have zuchini she would grind up green tomatoes and make fritters ( she called them pancakes) . She would add minced onion and some garlic to the mix and fry . They were served as a vegetable side and they were so yummy ! I am going to try your recipe with my green tomatoes being that I am doing Keto. wish me luck ...

    I made this tonight and holy crap it was so good! My husband and I ate the entire batch (with a salad of course). Instead of goats cheese we used feta instead and it was great! Will definitely be making again!

    This morning I made these for my family. We have so many zucchini from our garden that I wanted to try something different.
    My big zucchini made 15 fritters that I cooked 4 at a time for 6 minutes on each side in a med-low cast iron skillet. They browned beautifully and cooked inside. Before I finished my last batch of 3 fritters, my son and daughter-in-law ate the first 12, mmmm'g with practically every bite! They have decided that Lisa's yogurt sauce will also be perfect for veggies dip during the holidays. Thank you Lisa! You made our Sunday morning brunch a refreshing and special moment :-)

    So... just made these in the air fryer n on the stove using only olive oil spray. I definitely liked the air fryer results better. It tasted less eggy and was cooked through better n a bit crispier. I also air fried with n without parchment paper... better without. As for the actual recipe... I added a crushed garlic clove n pinch of crushed red pepper. It was ridiculously good ! Definitely recommend!

    Just tried this recipe and it was spectacular! Used regular onions instead of shallot, parm instead of goat cheese and to the sauce I added a squeeze of lemon juice. I was worried about the almond flour giving them a gritty texture but it was anything but that! I will certainly make these again and again! Thanks so much for sharing this recipe. :)

    Why cut off the tops if you're grating? Use the tops as a handle.

      Lan Pham one side has the fronds and the other usually has a slightly fibrous pointy bit. I always top and tail carrots. Unless they’re a baby carrots or chantenay (wrong spelling I’m sure). It’s how my tutor taught us at college. Good enough for me😀

    Made these fritters and they were great. Wonderful way to use up zucchini. I always seem to overlook one and then discover a squash the size of small dog. I got rid of the water the same way I dry my lettuce. Put the grated zucchini in a fine mesh bag and then used the spin cycle on my washing machine. The zucchini was dry and fluffy. Just be certain to use only the spin cycle, not rinse and spin. Then I cooked then in my waffle iron, perfectly cooked and delicious.

    1️⃣0️⃣0️⃣% AGREED 👍 ‼️ Have 6 in the frig right now. I make zucchini stew. Ground beef, Italian sauce, add sautéed onion, garlic. Cube zucchini and put into pot. Use low to medium high heat. Yum❗️Don’t forget the grated parm/reggiano cheese on top.

    We make these in Greece but with lots of herbs and we serve them with tzatziki. I have never tried them with goat's cheese and I made them on Sunday. Thery are delicious! (But I added herbs! 😋)

    I made these and they were great but personally I will add some chili powder next time
    I also added a few pinches of cumin powder and coriander powder to mine and they were amazing!

    Instead of using almond flour I used mashed potatoes. I used garlic, coriander, zucchini, eggs, green chillies, rice flour, salt and pepper. Gluten free. Spicy and delicious.

    You can substitute Zucchini to a lot of other vegetables: coliflower, potato, celery root... and it will also work fine

      If you use potatoes (German pancakes?) then it's no longer keto per the title of the video.
      But I bet they're tasty.

    A little tip I use is to not cut off the top but cut a little off the bottom. Then shredd zucchini up to the top stem that way you have a small handle to hold on to if using a box grater

    You can substitute kefir cheese with the added herbs instead of yogurt and it’s EXTREMELY high in probiotics and absolutely delicious! Gonna try this recipe thank you!

    I am obsessed with your videos, I don’t know why I didn’t find you sooner!!!!so many ideas that I will put to use, as I mentioned in another comment I had total hysterectomy on February 24 (my birthday) and I had to rest for 12 weeks, so I gained some weight and now I am trying to get back on my road to a healthier me, so your videos will helps me achieve that, so thank you so much.

    Oh My Goodness! And I have some sauteed mushrooms, onions, garlic and kale mix that I do every week now - sinc e you taught me to 'Food Prep' instead of meal plan - that I can put in there. And I just bought a new Tuscan No Salt blend! And I have Pork Chops! Whoop Whoop - you are SO amazing!

    I want to put my hands through my screen and reach out to the plate to grab the fritters and swallow them 😂..and yeah i love yogurt as the topping because for me yogurt/tzatziki/Raita goes with everything!! Slurp Slurp

    I have been a fan of this video since the beginning; and also been making these fritters since as well.
    DELICIOUS, since juicing now I try to incorporate zucchini to juice because it leaves me with the dry meat, this helps me to avoid having to add salt to pull water out!!!

    i tried it without draining the water and i thought i ruined it .. but then i refrigerated the mixture overnight and the barter was then ok.. i loved it .. i crave for fried food but due to health concerns i was avoiding it .. but this recipe lit me up like a light bulb .. tnk u

    I make a vegan version of this using zucchini , sweet potato and onions and then add humus and rice flour and white pepper and curry powder , they come out really well and are a great addition to a lunch box salad, with some tahini sauce.

    Can these be made with chickpeas flour, if one is allergic to nuts or nut flour?

      I believe chickpea flour should be okay, but I would start with about 1/3 cup or so and add more if needed 😊

    I toss zucchini in salt but then use a salad spinner to remove the water. Works so great. Same for potatoes when you are making hash browns.

    I keep making these with variations. This time I used rice flour, which was what I found. Forgot to put the salt so they kept getting more wet as time passed! 🤦🏻‍♀️ still came out ok after adding more flour. I added chili flakes, opinion and garlic powder, salt and pepper and Boursin cheese with herbs.
