- The video uses a 20oz pitcher, 10oz cup, whole milk and a double shot espresso
- Some chocolates melt easier than others. I recommend a liquid cocoa when making a mocha as it mixes easily.
- Cocoa powder is optional but an interesting thing that you can do is only use cocoa powder instead of chocolate to create a vegan mocha (with an alternative milk ofcourse!).
- The sweetness of a mocha is really personal preference but you want both the espresso and chocolate to work in harmony. Not have one flavor overshadow the other.
- Properly foamed milk is half the battle of good latte art. It's important to not only add the right amount of microfoam but also incorporate that foam throughout the pitcher with a whirlpool motion.

Ι been making it differently with chocolate bars it's pretty good.
I first melt some chocolate with milk in a small coffee pot stir it with a hand mixer and then I add a shot of espresso in it's like hot chocolate but better

I justwant to make a disclaimer, I have never had espresso before yesterday, lol but had tried the frozen bean brand mocha, Java, Chocolate Chip frappe's mixes, where you add the powder mix to milk and ice.. it was sooo good. Very strong coffee flavor with chocolate..I fell in love,
My local store stopped selling them, and since I already love coffee.. I decided to order me a home espresso machine...
Then I ordered Starbucks espresso beans and made my first latte today.
It was good.. different than brewed... but I made it way too sweet lol...I added dark chocolate to the bottom of the cup then made the espresso, and added streamed milk after. Too much chocolate, bc I couldn't handle the sweetness level...
I know some people say home espresso machines aren't making real espresso, but it's a machine just like cafés, just cheaper and smaller lol.
Also, where I live, we are in the country, (in Ohio, in farming area, I have a farm) even our "city" is country haha, so there's no Starbucks or any Café to go to, and the nearest 1 is 100 plus miles from me so this is perfect for me..I just gotta get my dose right and the grind... although I made it really fine.

‘Real espresso’ is made under pressure, so it usually does take an expensive machine (pressure/heat control) or a manual machine (you supply the pressure!). But for many people, strong coffee and espresso are basically the same XD so if you just like milk based drinks and you like Starbucks, you can easily make tasty drinks without spending thousands. The problem starts once you try really well-made, delicious espresso once… and then you’re addicted and can’t drink the other stuff anymore LOL. But honestly most espressos you can buy are bad, even at expensive/fancy cafes. So your tastebuds are unlikely to be in danger haha.
Never thought to add the cocoa powder before the pour! I'll give it a try next time :)

I recommend Torani dark chocolate syrup because of the viscosity. I do not recommend the Ghiradelli dark chocolate because it is very thick and hard to squeeze.

Did he use Chocolate syrup in the beginning? Also, does the chocolate has to come before the espresso? Because When I google the diagram level of a Mocha, its usually the espresso that comes first at the very bottom, then followed by the chocolate, the steam milk, and the foamed milk.
Where I live a mocha is just an espresso, coming from the arabic word mokka, because that's where this country got it's first coffee back in the day.

The way I make “mocha” is by mixing hot cocoa mix and coffee together
It tastes fine but it has the exact same feeling of a monster energy drink in the chest
I would steam the milk prior then pull the shot- it’s a different taste when the shot dies
i think it counts for less when you’re adding a thick syrup like chocolate, since the syrup really binds to the espresso before the layers can settle and stratify.

How do you get no bubbles when mixing the chocolate and espresso if you’re using drinking chocolate powder. I have this problem at work and I’m not able to pour latte aren’t for mochas because of the bubbles ☹️
Mix the chocolate and espresso just enough to dissolve but not too vigorously. If there are any bubbles just swirl gently and tap against the counter to get rid of the bubbles just as you would with steamed milk. I end up doing better art with mochas surprisingly lol.

As a barista, we had to make it by making chocolate milk (mixing cocoa powder with milk) and mixing that with the coffee.
I can say with all honesty, this made me hate the mocha soooo much. It was a pain in the ass to make, so much mess. I am not fond of hot chocolates either since then.

So beautiful and effortless.. What percentage of milk are you using? Im never able to make any art cause the milk dissolves as soon as I add it to espresso
I am using 3.25% whole milk but can also do it with lower percentage milk and other milks that froth well like specific oat and almond milks. It might be the milk you are using because there are some milks that I cannot make latte art with just because it froths horrendously! So explore different brands and see what works for ya!

What to do when you use dark chocolate powder and not syrup?
For that version, add a leveled teaspoon of cocoa powder and a preference of sweetener instead of the liquid chocolate. Mix it well together as it might be a bit clumpy. That's it, could make it vegan if you make it with like oat milk and stevia for example.

Better workflow: prep the cup with chocolate sauce*; pour milk into pitcher; grind and tamp coffee; as you pull the espresso shot, steam milk; pour and stir shot with chocolate; bop and swirl your milk, then pour.
*weigh chocolate for better results. I recommend: 15g for 8oz; 20g for 12oz.
Lots of home machines don’t have dual boilers or heat exchangers so you can’t steam milk while pulling the shot
Just curious - is there a reason you pour the espresso into the chocolate instead of directly pulling the shot into the chocolate?
There are a few reasons why I prefer a separate container for the espresso.
- A lot of the time the splatter of the espresso goes all over the cup.
- It is also a way to quality check the shot before mixing it with the chocolate. If the shot looks bad, you haven't wasted the shot.
- Sometimes you work with other people behind the bar and are exclusively on shot pulling duty, while making the other person optimize and pick where shots go to maximize efficiency and lineup flow.
