Would Powdered Buttermilk be a good binder sub? I made 3 fillets last night and they did not even come remotely close to your finished product lol. I am going to make them again tonight but, I'm following your recipe this round. Mine were a disaster altogether. No flavor, binder fell completely off from lack of heat in the grease, slightly chewy/rubbery etc.

Add a little Corn meal to that flour
Solt and paper better using 1 hour before frying . Will be good marinated,and taste much better.
I tried this recipe. My fillets fell apart in the oil. But they turned out delisious
Probably your oil wasnt hot enough. Leave the fillets outside to wam up to room temperature then fry them. Hope that helps
