Would Powdered Buttermilk be a good binder sub? I made 3 fillets last night and they did not even come remotely close to your finished product lol. I am going to make them again tonight but, I'm following your recipe this round. Mine were a disaster altogether. No flavor, binder fell completely off from lack of heat in the grease, slightly chewy/rubbery etc.
Why do you boil it?
Boiling pasteruizes the milk. Then you add yogurt culture. From what I understand it is best to boil off whatever good or bad microbes are in the milk/cream and afterward introduce only those with which you wish to cultivate yogurt. Some say it tastes better or sets better this way than to leave potentially competing cultures.
