Something else to try with the Millionaire Royal is wet shaking ingredients without egg white (diluting acid & alcohol), then reverse dry shaking with egg white! Join the Siduri wine club at www.siduri.com/wine-club!
I agree. I struggle with dry shaking because the stuff tends to get everywhere after I open it, due to no seal from lack of ice. Any tips would be appreciated!
Yeah, I avoid any cocktail recipe with egg whites in it. I bake, so I know what a pain in the tuchus egg whites are when they're not interacting with alcohol, and the idea of mixing the two does not appeal. If there's a trick, I'd love to know it.
As a bartender for many years...egg white cocktails IN GENERAL, give me anxiety. I wish I knew the exact chemistry behind what and why some egg white cocktails curdle. I've never had an issue with it, making a Boston (whiskey) sour...but on others, I have. And I'll be damned if I know why.
As a bartender who runs his own cocktail program, and loves egg white cocktails, I would love too see an egg white video. I only put an egg white cocktail on the menu in the winter for cleanliness purposes and batch my egg whites for easy measuring. Its a pain, but I find less egg white goes as far as a lot of egg white. Love your videos and would love to hear how you handle your eggs!
Oz, your production touch is brilliant. The disappearing/reappearing glasses was hilarious. You guys make a great pair and keep me entertained every weekend (while also teaching me new drinks!)
We have been Siduri wine club members for over 10 years. Love how the wines taste like new stories written by the same author. The parties they've hosted where you can meet the vinyard farmers are also a major bonus.
I love all of your stuff guys. You make Fridays even better! As for the egg issue, I like to use pasteurized egg whites from a carton. Much easier clean up and measuring. Also instead of a dry shake I use a milk frother.
Was hanging out at a Tiki bar, chatting with the BT (eric) and found our common enjoyment of your channel. He made me an El Presidente of your style and he is one of my favorite peeps. TO THE BAR!
I love the fact that you brought up the whole egg white scrambled egg issue. I make a ton of egg white whiskey sours at my bar and I’ve noticed this specifically happens more often with higher proof bourbons. The separate tin method is something I’ll definitely be using in the future, but I’d really like to see a solid video breaking down what’s happening from you in the future.
That's very cool that Siduri is a sponsor. Adam Lee is a cool guy and they make very nice wines! Anyway, I am very appreciative that you showed that the process sometimes goes awry, even with you behind the bar.
I’d love to see you guys do an egg white video. I almost always either avoid egg white cocktails or make eggless versions - because the cost-benefit of mucking around with an egg for 1-2 cocktails does not, on the face of it, seem positive. But seeing an expert break down the subject could be useful. I don’t know what I don’t know, etc.
Delicious video... I would like one of these days to see you compare Aquafaba to Egg White in the same drink and point out the different nuances of each. Especially, I'd like to know if Aquafaba would not have the curdling (scrambling) problem of Egg White.
We use the Michael Ruhlman method for all egg white cocktails - dry shake just the white first, then dry shake all the liquid ingredients together, then finally shake with ice. It’s a lot of work, but has never once failed us - no curdling or scrambled eggs ever. These drinks look awesome, can’t wait to try to recreate at home!
Hello Anders…always enjoy a good history lesson!👌👌👌I love the effort you put into making these drinks…I think I would go with Millionaire 1…just for ease!😁😁😁 would love an egg white video! Have a great weekend and as always “CHEERS!”❤️❤️🍹🍸
@@caspianberggren4195 $47 after tax for Appleton 12 where I live in USA. Appleton Signature is also another great bottle and bargain at only $24. I'll definitely try the 12 yr when I finish my bottle of the Appleton Signature.
I like the idea of an egg white video if you also include whole milk in the video. I’ve scrambled the White Russian so many times! I finally figure it out, stop making it for a while, and then forget and have to start over. “How to stop curdling your drinks” is the theme.
I would love to watch an eggwhite video! Granted, I would watch literally any video you post 😂 Cocktails, mocktails, success and failures... I'd watch those! Day In The Life of Freya.... Would definitely watch! You could sit there and talk about your bar listing everything you own and I'd be down for that. My wife and I love your videos!
I’d love a egg white video! When I started making cocktails at home a screwed up a few whisky sours and thought it was some chemical reaction between the egg white and the acid lemon juice. I used to add the egg white in the shaking tin, than stated to build the cocktail on top of it. The egg white scrambled… After a few tries, I figured out I could build the cocktail in the larger tin, than serve the egg white in the smaller tin, than mix all together really fast and do a dry shake. After that wet shake and serve. My whisky sours ended up perfect following this method
Yes! An egg white video with explanation/history would be helpful and informative as I continue my archeological cocktail making in the original period glasses!

So, when I use egg white with higher proof alcohol (100 proof or higher), I start with ice in my tin, then crack the egg white over the ice to cool it down. Then I pour in all the alcohol, do a wet shake with it all, then empty, and dry shake. Usually works great. Looking forward to trying these!
