Hello, I made these today and they were great. Thank you! Some of my filling was a little too juicy and so my first two empanadas got a little messed up. They actually tasted the best though even though they looked the worst. I really like the simple empanadas dough recipe as well. I am going to try and use that for all kinds of different empanadas like this.

When your fillingbecome juicy because we do tend to make them so adding more ingredients such as lemon juice, more salt or cheese.. the best way to deal with is change the form of your pie. To make boat-shaped pies roll each piece into an oval shape, put in your filling then pinch both upper and bottem ends of the oval shape pie together closing a bit over the filling.. the sides will naturally cup the filling and prevent it from spilling. Ever watched Turkish stuffed pies? Take a peak and learn the method for yourself.😀

Raisins?? 🤔 Hmm.. must try I do like spinach pies to be tart though. 😁 Some if us woukd use pomegranate molasses when some would add sumac seeds to give it the zesty flavor So good with onions in making spinach pies but again I shall try raisins this time. Thank you so very much for this recipe. ☺️

Made these as per your recipe but I used commercially made dough disks (Goya) which made them super simple. I baked a few and fried a few more. The fried version was superior but in reality, the dish was underwhelming. I love all the ingredients but feel it was missing something, maybe some dill and Feta (then it would be a form of Spanakopita) . As is, it is reminiscent of Pollo Chilindron in that it doesn't live up to its name.

Pine nuts went from being pricey to very expensive as TV chefs and cooks popularized them, and has opened up a counterfeit market much like evoo. Good quality pine nuts consistently came from Sicily but are now imported from China or elsewhere. I noticed in a couple of nearby stores that these nuts will sit for many months on the shelf, causing me to question their quality level. I find that a potato ricer works very well to squeeze excess water from frozen spinach or anything shredded like cucumber or zucchini. Only drawback is there's another thing to wash up afterwards.
