Today I made this empanada. The first one ever. It tasted like my Abuelita's. The dough was so, so easy. I never tried it because I didn’t think that I could get the dough right. I am Galician and there are three things that we Galicians respect more than the Cathedral of Santiago de Compostela: " lacon con grelos", " pulpo a feira" , a work of art, and las empanadas, the eighth wonder of the world. The empanada was a way to preserve food, it can be almost anything, and be made from wheat or corn flour, the most typical are meat, tuna, cod with raisins, cockles and small sardines. The real trick of the empanada is the dough
I cooked this last night and it tastes great! I can definitely recommend it. For the filling I used some fresh parsley from our garden. Since I don't like boiled eggs, I made an omelet out of the 3 eggs and put them on top of the filling. I had made a mistake: I did not put the dough on the baking tray, but already added the filling on the countertop. This makes it very difficult to get that on the baking sheet. I managed to do that, but I no longer had the edges without liquid and I had to form coarser edges. This is a tip if someone wants to do the same. I also made the decorative stripes. The end result is impressive. The amount is enough for my wife and me for 2x dinner.
I would probably add a few olives to that ... but anyway, I like that you give the weights because I find that it often helps to be pretty accurate with the weight measures the first time you try a new receipe.
Having grandparents from Spain we had tuna empanadas all of the time. I still make it frequently. My family's recipe, which I still use today, is almost identical to your recipe! The only difference is that we don't use hard boiled eggs. We also, very infrequently, had ground beef empanadas. Thank you for this. It is an easy and simple recipe that packs a wallop of flavor. It is so satisfying.
Thanks for this comment. I loathe eggs (unless they're disguised as something else) and wondered if not including them would take away too much flavour. Will definitely try this without them. Do you make your ground beef empanadas about the same way as these?

I made this along with the roasted potato recipe last night for dinner. This one was voted into rotation by the whole family. We all agreed that we would prefer a leavened crust over unleavened, but all in all this recipe as is was given 4 out of 5 stars by each family member. That rarely happens.

Albert, this is fantastic!! I have got to try this recipe! Hubby said I need to make it so he can try it too. Silly question though, why is it that in some recipes (when using tomatoes) that white sugar is added to reduce the acidity, and other times not? *SHARED*
It depends on the rest of the ingredients the tomatoes are being added to, in this case, you get the sweetness from the bell peppers and sweet paprika, so that will balance the acidity :) Much love Terri!

You should not use it. The oil in the can has already been heated when the fish is cooked. Never reheat oil.

In the UK we don't get cans of tuna in olive oil. Ours is in sunflower oil can I just substitute those for this recipe

One question, why do you add only half of the green and red bell pepper? What do you do with the rest? Why not just chop half then?
As a Galician. The oil in the dough comes from frying the filling first.
