(ENG SUB) Baking Soda Tenderized Black Pepper Beef - Inexpensive Cut Became So Tender

  • This video is to share the baking soda tenderizing method which works for any kind of meat and this time, I made the Chinese style black pepper beef with it which came out so tender without having to purchase expensive steak cut. Of course there is a slight difference in texture due to the shape of the grains but the overall texture was like those Chinatown favorite beef dishes. Hope you enjoy and happy cooking~!
    Ingredients
    Beef (Blade Roast) 850g
    Baking Soda 1 tsp
    Cold Water 500 ml
    Marinade
    Oyster Sauce 2 Tbsp
    Soy Sauce 2 tsp
    Black Pepper 1 Tbsp
    Corn Starch 2 Tbsp
    MSG 2 tsp
    Plum Extract (sub Mirin if you can't source) 1 Tbsp
    Shaoxing Wine 2 Tbsp
    Cold Water 3 Tbsp
    Stir Fry Sauce
    Shaoxing Wine 3 Tbsp
    Corn Starch 2 Tbsp
    Water 2 Tbsp
    Sugar 1 Tbsp
    Soy Sauce 1 Tbsp
    Dark Soy Sauce 1 Tbsp
    Oyster Sauce 2 tsp
    Worcestershire Sauce 1/2 tsp
    Vegetables
    Bell Pepper 1 ea (half and half mix)
    Red Onion 1 ea

    Ive done this bakimg soda method.yet its still tough..the quality of chuck roast i use was bad i guess.

      큰 덩어리는 연육이 그닥 잘 되진 않아요. 40분이 넘어가면 바깥쪽이 살짝 녹는 느낌이라 작고 얇은 컷만 사용하시는게 좋아요.

    한번에 많은양 연육 후 소스에 많이 재워서 다음날 소분해서 냉동해도 되나용?

      베이킹 파우더는 소다보다 Sodium Bicarbonate 의 함량이 낮은 걸로 알고 있습니다. 양을 늘려서 사용하시면 가능하나 왠만하면 베이킹 소다 구입하셔서 쓰시길 추천합니다.

    선생님 레시피 영상 너무 잘 보고 있어요 고맙습니다~ 베이킹소다 레시피를 다 봤는데 물이랑 비율이 비슷하면서도 다 다르더라구요~ 퍽퍽한 돼지 뒷다리 살 2cm 정도를 연육해서 구워먹으려고 하는데 물과 베이킹소다 얼마의 비율로 넣으면 괜찮을지요??

    샤오싱주 대신에 맛술 넣어도 될까요? 그리고 노두랑 우스터소스가 없는데 맛 차이가 크게 날런지요?

      맛술은 샤오싱주 보다는 달고 노두는 안 쓰면 깊은 간장맛은 안나겠네요. 우스터 소스가 안들어가면 산미랑 좀 캐릭터가 없어진다고나 할까? 레시피에서 3 가지나 재료를 바꾸거나 안 넣으시는데 차이가 안날수 없겠죠? 레시피는 언제나 가이드 라인 이고 본인의 취향과 상황에 맞게 만드시는것도 요리의 재미 아닐까요?

    THX for the recipe. I tried it today. The meat was great. But for both the marinade and the sauce it was too much starch. So for the sauce I needed to add a lot of water (mixed with cooking wine and soja) to get a perfect consistance. Can somebody confirm this issue?

      그것도 맞긴합니다. 하지만 저 부위자체는 근육자체가 좀 힘을 많이 사용되는 부위라서 등심 혹은 안심처럼 근육 자체가 연한게 아닌 전체적으로 살코기 부분도 좀 질긴편입니다. 아예 질긴부위를 손질하지 않으면 먹는 수준이.. 아주 최악으로 내려갑니다.

      비율이야 테스트 후 조정 해야겠지만 네 대체 가능하죠.
