  • Mutton Kosha is an iconic Bengali delicacy. The word "kosha" is similar in meaning to "bhuna" which means to slowly cook a gravy over low flame for a very long time leading to a rich, brown gravy and melt-in-the-mouth mutton pieces. It is worth pointing out that in Bengal, or India for that matter, mutton is commonly used to refer to a goat's meat. Mutton kosha (kosha mangsho) is served with Paratha or with Polao. It tastes great even with plain rice. One of the most famous shops selling this style of mutton kosha is Golbari in Shyambazar, Calcutta. While we are not certain that our version of mutton kosha is exactly the same as the Golbari's, but this certainly tastes very good.

      Ranajit Roy true. U may not need jayfal javitri n kajubata. But u need jeere bata. Jeere bata adds a nice aroma. But u r spot on.

    okay, we just cooked this mutton delicacy. it is amazing. i must say this as a telugu person that we can never ever imagine putting sugar in our non-veg curries. but i believed in it. and we put sugar in the curry. it turned out of this world. the sugar complemented the spices. the balance in the taste was something i have never tasted. it is lipsmacking, fingerlicking good. thank you for sharing the recipe in such detail.

    I prepared this dish today and the results were outstanding. It really is a Labour of love but then I had a 5 hour conference call, so cooking alongside was a no-brainer 😀. I followed the recipe faithfully without any modifications other than using my own garam masala instead of the shahi garam masala. As is the case with other BE recipes, the quantities were really accurate and because everything is in grams and ml, scaling up was really easy. During the slow, controlled browning phase, I did increase the cook time in each iteration from 1 min to between 3 and 5 mins and achieved the same result. The salt felt too much after the browning phrase but I kept the faith and it evened our nicely after I added the water for the gravy. I will definitely make this again although I will likely use the pressure cooker to get to reduce the cooking time. I know it won’t be the same so here’s hoping for another long conference call in the near future. Thanks for the meticulous documentation of the recipe and the very helpful graphics in the video. I am a fan and I usually have something I prepared following your recipe in fridge almost all the time. Cheers!

    Being a tamilian I never had the opportunity to taste authentic bengali cuisine, that was until last December when one of my bengali friends introduced me to this mutton kosha... it was easily one of the best dishes I've ever had.
    To this day I eat this everytime I get an opportunity!!!

    Hi, not sure if you'll read this comment but I wanted to share a personal experience. I married into a Bengali family and I knew very little about Bengali food. It is been three years and I always come back to this recipe and the love that goes into making this. My husband absolutely loves this recipe and swears by it too! On top of it all, his family was visiting from the US earlier this year and I made this for them and they told me it's the best mutton curry they've had!
    All the love and patience that goes into making Kosha is soself-rewarding. I cannot thank you enough for this lovely recipe!

    I made this for my parent's anniversary. Tested superb. However when I added the yogurt it released so much water that by the time that evaporated the caramelization was done. I didn't need to add the water during stirring at all, only at the end. After it was totally black I put it in the pressure cooker with large potatoes to finish it up. Highly recommend adding potatoes

    Hi Insia & Saptarshi, I tried cooking Kosha Mangsho, following your instructions and recipe for the fist time in life yesterday. Our guests as well as I myself are unbelievably happy with the result. As we rarely consume read meat at home, cooking mutton properly , when required, has always been a challenge for me. Your lucid explanations about the browning process was sort of an eye-opener, which no one has been able to clarify and convince me about until date. Your measurements , indicating everything with grams is a bit tricky to follow; I had to rely on some simple math as well as my instinct to decide on the proportions for some of the ingredients. I finally managed to cook perfectly tender and juicy 1.5 kg of meat in 3.5 hours ( prep time excluded). Though I had initially decided to hasten the process by changing to pressure cooking midway, but later I discarded the idea and continued following the path shown by Confucius. Thank you for the wonderfully simple recipe .
    Also, your website and the videos are a pleasure to watch :) . I have become an ardent follower.

    I tried this today but after about 50 minutes when the color was almost similar to the video I put it in the pressure cooker as my dad was hungry and impatient.     The recipe is really simple! What brings out the flavor is slow cooking the mutton! I made this yesterday and omg! IT WAS INCREDIBLE! If I could only post pictures here! I felt like I went to a restaurant and had this dish! I didn’t have mustard oil so I made this with vegetable oil. But I’m just imagining how this would taste with mustard oil!     I am a big fan of Bong Eats not only because of the recipes but the way you present them is amazing and I love the fact you start everything from the trivial preparatory stages like how to cut the onions etc, almost every recipe is saved in my library. I have actually learnt how to cook certain dishes and apart from phuchka, each one of them came out really well. Even my little brother follows your channel ardently and tries to cook something who does not like anything but video games and sports. Now, I made mutton kosha yesterday on his birthday and it was sensational I must say and he told me to thank you people.     The recipe is fantastic! Loved the way it is explained with spices and cook times at the bottom - and all this without narration! Will try it tonight!
    Update: spent 3 hours cooking the dish and the whole house was filled with the fragrance of the spices! My wife, doesn't prefer the taste of mutton in USA, but decided to dig in! It was a win! Thanks again for the recipe!

      This means total length will be of 7:19 * 1000000 = 7190000 minutes
      Now 7190000 minutes = 119833.33 hours = 4993.05 days= 13.68 years

    Amazing recipe!!! Tried it with beef but it took longer to get tender because beef is tougher. So I had to pressure cook it eventually and it wasn't as dark as wanted it to be. BUT, no regrets whatsoever.. it was amazing hopefully next time I'll make it perfectly 😋😋😋😋😋

This is my favourite lamb curry, my younger sister doesn't like red meat because she has dental issues but this. Even she can't resist. If any one reading this is second guessing if the time to make this is worth it or not. It is. Make it. Make it, feed it to your loved ones and be loved even more.     I have prepared this dish for around 10 times now and won't stop soon! It's such an amazing dish. Thank you bong eats for the lovely work. The only thing that i'v felt is that during cooking instead of 150-200gms yogurt(tok doi) 50gm-75gm tastes the perfect for me since it's already marinated with yogurt once and gives the perfect balance!

    I loved the way it was browned. Tried today since only lock down could give me that much of time. The result was good. After browning it in high flame cooked in cooker to tender the bones though. Thanks bong eats for sharing
