Millet Ada Recipe, a delicious treat steamed in banana leaves! Millet Ada is a nutritious South Indian delicacy made with a filling of jaggery, coconut, and millet, wrapped in banana leaves and steamed to perfection. Not only is it flavorful, but it’s also rich in fiber and nutrients. Whether you’re looking for a healthy snack or a wholesome breakfast, Millet Ada is a fantastic choice. In this video, I’ll show you the step-by-step process to make this easy and tasty recipe at home. Perfect for all ages and an excellent addition to your diet, this millet-based dish is both comforting and healthy. Ingredients:
For Dough
1/2 cup - Little Millet(soaked overnight)
1 cup - Water for grinding and cooking : etra for soaking
2 tablespoon poha(rice flakes) - soaked in 3 tablespoon water
Pinch of salt
For fillings:
1 cup - Fresh grated coconut
1/2 cup - Grated jaggery
2 tbsp water
4 - Cardamom
2 peppercorn size nutmeg
1/2 tsp sugar
Additional things:
Banana leaves (or parchment paper) for wrapping

Instructions:
Soak Millet Grain: Start by rinsing and soaking the millet grain overnight or for at least 6 hours. Once soaked, drain the water.
Soak poha in water for 10minutes
Prepare Filling: In a pan melt the jaggery with little bit of water. Strain it. Add coconut and cook until it turn thicken. Add Cardamom and nutmeg powder. Mix well and keep aside.
(Or easy method: In a mixing bowl, combine grated coconut, jaggery, and Cardamom powder)
Grind Millet: Grind the soaked millet and poha with 1/2 portion of water to form a fine/coarse paste.
Transfer to a pan. Add add another 1/2 part water. Here I used 1:2 ratio millet and water.
Keep stirring at medium heat until it form a soft dough. Switch off the stove. Rest for 5 minutes.
Once it slightly cooled, Knead the dough with a greased hand. Divide the dough into lemon size ball.
Forming the Ada: Take a softened banana leaf. Take a millet ball. Flatten it over the banana leaves. Place a spoonful of the filling mixture on one side of the spread paste.
Fold and Wrap: Fold the leaf to cover the filling, seal the edges and make a parcel.
Steam the Ada: Place the wrapped ada in a steamer and steam for 10-15 minutes,
Serve: Once done, let it cool slightly, unwrap, and enjoy the millet ada warm!
This snack is nutritious and gluten-free, perfect for a healthy breakfast or snack.

It reminds me of making pasteles, using either green bananas or other root vegetables to wrap the filling. We can't find banana leaves easily and use parchment paper instead.
