    I wanted to say I love this short cut. I have made it twice already cuz I having been feeling that great and this is probably the only thing I can eat that goes down easily. My mom use to make this for me when I was sick. She is no longer with us, so I wanted to thank you for this easy to go recipe.

    I grew up on this in Thailand. Absolutely love Jok. I've been using the Knoor Instant Jok but I think I'm definitely going to upgrade my Jok now haha

    My mom made this and now I make this for kids. No need to blend it in the blender, that's a time killer and an unnecessary dish to wash. Also, for even quicker porridge, use leftover rotisserie chicken, just de-bone.

      I don’t know, I find that blending the rice instead of leaving it whole makes the dish smoother, I’ve had both often and I prefer the blended version

    Mmmm just released a video of jok cooking from scratch. Us cantonese peeps have this joke where if you call your friend and you get a busy signal (on their landline lol this doesn’t apply to modern day) it means they’re making congee - because you have to stand there and stir for hours so you gotta call a friend for company 😅👨‍🍳 man I feel aged lol... this is a great tip pai, I always wondered why people don’t half blend the porridge in a blender...now I know it works 👌❤️🙌🍚🍚🍚🇨🇦

    Yep, the word congee is from the Tamil word kañci. FYI, the Tamil language is spoken in Southern India and Sri Lanka. BTW, "porridge" is from the Old French word potage, which means soup or stew.

      Thai after all has origins in Sanskrit.
      French originates from a Indo-Iranian language group where Sanskrit has a major influence/composition

    I’ve eaten this thing and it’s the deal. I eat it when I’m hungry, I eat it for breakfast and it actually makes me feel way better when I’m feeling sick.
    What I put in there is pork and eggs and it’s soo good. Now, I’m eating it nearly every day.

    Oh wow I'm from Tamilnadu, South India. We call rice porridge as kanji (congee) too !! It is so very common here except with the modern people these days who think that kanji is poor people's food except that it's not ! It's a very very good healthy food !! 😊💕 btw I loveeee ulundhankanji which is very very tasty especially with spicy sour sauce or chutney !! 😍😍😄👒

    I love to cook, but this is something I want someone to cook FOR ME! In Thailand, I lived 100m from a great jok/khao mun gai shop. Ate jok most mornings and broke my scales. I had to moderate it a bit. Sticks to the ribs and slips to the hips!

    I love just to have the plain congee together with choices of side dishes. Salted egg, salted fish, dried anchovies fried with red onions are some of my favourite.

    My mom use to always make this for our family and it's amazing. For the topping I add what you add including cilantro, lime, and fried garlic. The fried garlic makes it so delicious!

    Hi Pailin, Congee is from Dravidian (South Indian) root Kanji, ganji which is taken into English during colonial period. People in India call it a poor man's food, which is accompanied with salted pickles, shallot onions, chilies and other condiments like fried dried fish as well and eat in summer.

      No, is a chinese food. Thai jok is a chinese influence not indian. Most likely kanji in south India is also a Chinese influence.

    I make Jook ( this is how my Mom spelled it) with the ginger and I add Chinese parsley , green onion and turkey is the meat I use. I make Turkey broth from the carcass of the Roasted Turkey we make from Thanksgiving or I use fresh Turkey leg and thighs, roast that and then make my broth after I take off some meat! The legs and thighs and broth freezes nicely as I use my Foodsaver to package for the freezer! I can make whenever I want for dinner or lunch when the weather is cold!!! I am really enjoying your videos very much!

    In viet we call this chao. Theres a local Cantonese Viet place near me that has the best fish congee its especially good with a side of the chinese fried dough.

    Nice recipe! I always ate during rainy day replaced by beef.. In Northern of Malaysia we also used to call rice porridge as “kanji” same pronunciation as congee! ☺️

    Filipino version is arroz caldo!! Soo good and comforting on cold/rainy days or whenever feeling under the weather!

      Crack a raw egg on top of the Jok, break the yoke and streak the egg through the hot rice and it cooks just enough to form the egg into the most beautiful custardy texture... Almost worth being sick for! 💛

    In the Philippines, we call it lugaw, but we cook the rice until it becomes tender, like oatmeal. We sauté ginger, garlic, onions, and a meat broth, and of course, we also add boiled eggs and a topping of fried garlic and scallions and add lemon or calamansi. It's delicious with a side dish like tokwa (tofu) and other fried meat.

    In India, savoury rice porridge is called kanji. But it does not contain chicken or other meats. It may sometimes contain a small amount of lentil.

    Konjee might be from Indian “kanji” which is rice/millets/maybe grains cooked soft in a soupy consistency - we usually eat it with pickles and sometimes with buttermilk

    My first bite of congee was one of the many highlights of my trip to Laos! Just a woman on the sidewalk with a huge metal pot, and a few tables with lime, soy sauce, and chili oil. she put an egg in it too, and I think the protein might have been blood jelly.

    Im australian and I was curious to know what this congee is.. ive been watching a lot of kungfu movies on netflix and this dish is in a lot of them. This might sound silly but thanks to netflix it has opened my eyes to real Asian foods. There's a great doco called Flavourful Origins and i can appreciate the history, the effort and how the flavours form on a molecular level.

    Patongo (beignet type fried dough) translates to Goldfish Tails, is the perfect accompliment to joke. I like fried garlic slivers also as a topping along with some cayenne pepper powder. I also add a raw egg to be cooked with the residual heat so the white is set but the yolk is still soft. I always make a little more rice than I need for a meal so I can have joke for breakfast. I keep a bag with sous vide-cooked meatballs in the freezer.

    My lockdown version of your recipe - Didn’t have sesame oil and chicken stock so I added pork powder to the ‘Chok’ and added a bit more soya sauce to the grounded pork. Approved by my Thai friend as well 👍

    In the Philippines we have different names for congee. Lugaw for plain congee, arroz caldo for chicken congee and goto for congee with intestine.

    Finally landed here for trails on Thai cooking .. do u know we have something common here .. I hail from Kerala the southern most state of India .. we have rice porridge here as well which is called Kanji = like Congee.. we don't blend it but we mash it while its cooked so that the rice blends in with the water and trust me in Kerala we do not mix the meat or the seafood along with the porridge but use as a side dish which would eventually move into the pot when ur taste buds starts acting all yum.. btw .. I love the final finish of Ginger and white pepper would definitely try this !! Thanks for the video .. God bless ya !!!
