    Broth recipe - add all ingredients to blender for 3-4 min:
    2-3 cups of water
    1-2 tbsp nama shoyu or tamari
    1/2 to 2/3 cup of tahini
    2 tbsp white miso
    2 cloves of garlic
    1-2 tbsp of coconut nectar
    1 tsp chilli flakes
    Salt to taste (start with a pinch)

    Made this tonight and my husband said it didnt taste raw. We loved it!! Added red bellpeppers and microgreens. Yum!

    In response to the commenters asking why dehydrating isn’t cooking- I’d have to say that dehydrating happens at a MUCH lower temperature than cooking. Cooking happens at at least 185F to simmer, but for most cooking happens at 212F to 500F or above. Dehydrating can occur at room temperature or in higher outdoor temperatures like Palm Springs at 120F- much lower of a temperature and less nutrients lost I’d say.

      Any time you use a device that affects food molecular structure it is no longer raw. For example raw tomatoes is not the same as dehydrated tomatoes. But I think this point is minor in the grand scheme of things.

    For soy-free:
    Sub coconut aminos vs nama shoyu/soy sauce.
    Sub chick pea miso which is soy-free.
    Or maybe just add in some chickpeas to the blender.

    Wow...this is one of the most delicious soups/sauces I have ever tasted in my life. Thank you so much for sharing. In addition to the standard ingredients, I included fresh ginger, half of a green chilli, a touch of rosemary, and replaced the base with a cup of coconut milk and a cup of pineapple juice. I'll probably get 3 meals from this too.

    Me and my husband ( both vegan ) absolutely LOVED this dish, so so good! I’d swap the kelp for regular ramen noodles or if someone can tell me how not to get my kelp noodles to taste like a hundred lemons when soaked in lemon water lol. xx

    Soup lover, here! KimChee would be excellent to add as topping. It's a typical ramen topper. Mother-in-Laws makes great vegan kim chee! Will def try! Thanks for the recipe!

      Interesting suggestion. Kim Chee is Korean and Ramen Noodles are Japanese dish. I have tried adding Kim chee before, I think it makes everything taste like Korean dish

    corn stigmas (corn hairs that are in the corn cob)
    you can use as a vermeshel.
    as a sauce - blend corn kernels.
    you can add corn oil
    , salt, pepper - to taste.

      There are two types of kelp noodles: green and clear. Green kelp noodles have the consistency of al dente pasta and taste like seaweed.
      Clear kelp noodles (the more popular type) have a relatively bland taste, but some brands have a slightly salty and bitter taste that can be reduced somewhat with a thorough rinsing. They are crunchy in texture.

    Have you ever considered using fensi? It’s a noodle from China originally made from starch, traditionally mung bean starch. Very versatile and tasty

    Kristina, I made your ramen this weekend and my mother and I loved it 🥰❤️ I used rice noodles instead of kelp noodles and agave instead of coconut nectar because I couldn’t find them in my city. But it was absolutely amazing! 🥰🙏 Thank you 💞

    Dehydrating isn’t raw for all those who are saying it’s still raw raw means the ways it’s comes out the ground still looks great

      Raw food, as part of a raw food diet, is typically unprocessed vegan food that has not been heated above 115 F. The core idea of a raw food diet is that foods heated above this temperature lose important enzymes and nutritional value. Raw food can be prepared in a variety of different ways, however the focus is to prepare the food in a way that does not heat the food above 115 F.

      Although kelp noodles aren't easy to find in grocery stores, they may be in the refrigerated section (near the tofu) or in the Asian food or noodle aisles. They are also available for purchase online.

    Just starting to venture into this way of eating (not vegan yet, just trying to shift a little at a time). So, why no sesame oil? Is it just a preference or is there something wrong with it?
    *note: I’m functionally addicted to sesame and chili oil, so I’m not planning to stop using then anytime soon, I’m just curious. 😊
